Hi Everybody! I'm so thrilled to finally be sharing my Keto Sourdough Bread recipe with you all! Creating this recipe has been a journey and now that I have perfected it, it time to show you guys how to make this delicious bread. You're going to love having another option for bread on your Keto journey, I know I do. So go ahead and kick your feet up and get comfortable because this video is a long one. Sorry about that, I cut down where I could but I wanted to make sure you guys were well informed for this recipe and hopefully you won't have any trouble making your loaf of sourdough. Recipe Ingredients:
1 1/2 cup (180g) Vital Wheat Gluten
2/3 cup + 1 tbsp (88g) Lupin Flour
1/2 cup + 1/2 tbsp (39g) Oat Fiber
1 tbsp Olive Oil
2 tsp Salt
1/2 tsp Xanthan Gum
1 tbsp (12g) Instant or Quick Rise Yeast
1 tsp Honey (to activate the yeast)
475g Hot water (between 120F - 130F)
200g Lupin Sourdough Starter
Nutritional Facts for 1 whole loaf cut into 13 slices. For 1 slice: 91.6 Calories, 2g Fat, 1.7g Net Carbs, 15.0g Protein.
Nutritional Facts for 2 loaves cut into 13 slices. For 1 slice: 45 Calories, 1.0g Fat, 0.9g Net Carbs, 7.5g Protein.

Love your videos! They've inspired me to create my own lupin flour based bread recipes. Something of note: 100 degree F or higher begins to kills the natural yeast in the sourdough starter, which will not change the flavor but will reduce rise, so if putting in 130 degree water, it's a good idea to let it sit for a few minutes to cool down before adding the starter. I imagine putting in the dry ingredients before the starter (as done in the video) cools the water down enough, but just in case figured anyone reading this would appreciate this troubleshooting tip. 3rd and 4th bake, they are coming out perfect! THANK YOU SO MUCH for all you did to make this happen for so many low carb #keto people. The rise has improved, they look like what I gained 90lbs. on fresh bakery sourdough breads. Never thought I'd be re-united with a culinary favorite. It's worth it, if your struggling with early bakes, HANG IN THERE SWEETIES it works!

Samyah that was amazing. That bread looked so good, and while it’s not an easy recipe, your clear, humble (it was great how you honestly commented about frustrations with the wig!) and gracious manner give your viewers confidence that they can follow along and do it too. I just made this bread...so far so good. Just took it out of the oven and didn’t wait fo it to cool. Cut two pieces and slathered with butter. DH said it had good texture...I just loved the smell!!! Great recipe. Is this recipe written anywhere? I did the whole recipe while watching KZbin...phone is now covered with sourdough starter! I am a very messy cook🙀. Thank you for this.

Hi Samyah,. Really like your show. Thought I'd mention that when I was making Sour Dough bread, I didn't use a pizza stone. I used a 6-Quart Italian Enamel-on-Cast-Iron pot. You won't have to heat it as long and by keeping the lid on it will retain the moister inside the pot so no need for the extra cookie sheet and water. I only preheat mine for about an hour at 500 degrees then drop it to the necessary cooking temperature. The bottom of the bread will cook beautifully and the crust will be very crisp. Good morning. Just want to let you know that you are awesome. I have made your lupin flour bread and now the sourdough bread. I did modify the recipe a little bit to reduce the amount of lupin flour and incorporate golden flaxseed meal. I am hooked. Made the sourdough bread yesterday, and had 4 pieces but did make the 2 smaller loafs. It was so worth waiting on the sourdough starter. I worked with the starter for 10 days then refrigerated. About 10 days later took it out the refrigerator and allowed it to get to room temperature. Wow, it like expand so much it was like it wanted to burst out of the jar.. thank you, thank you, thank you. I finally have keto approved bread that I love. And yes the sourdough bread is so much better than the regular.

Ok, now I’ve watched this completely and I must give a real review of it. Before I only commented about how nice it was to hear your instructions without having to compete with loud or annoying music in the background, which is something we see more and more of. I would just like not to hear any music in the background you have a sweet voice and it bothers me so bad to hear music it's distracting th for your recipes stay safe.

I love your channel! You’re an inspiration to me and I must tell you THANKS for the sourdough recipe!! I just finished two weeks of building my sourdough starter (fun and interesting). Made my first loaf today, and it was so very wonderful. Since this is a moist bread, my husband (not keto but loves the bread) and I found toasting the bread slices worked really well. I took a picture of my beautiful bread loaf but couldn’t figure out how to post to You Tube. So, again, thank you very much.

you can hit the tare button on your scale whith the jar on it and it zeros it out. when you want to add something elae hit the tare and zero out again and add that

Make a levain out of lupin flour and water with the same proportions as her starter and then add yeast. Let it sit an hour to do its thing. Use it in the same way as the starter.

I started my Keto journey recently just to be a benefit to my healthy lifestyle. I LOVE bread so I'm thrilled to find out about Lupin flour and am waiting for it to come in as no one local carries it. I think I will try a different recipe of yours before I tackle the Sour Dough, which I look forward to as I love Sour Dough too! I can't wait to see if it passes the "husband test"!

So glad you put it in grams also, much easier, if you make bread 🥖 often, we’re used to it in grams, much more accurate.

A few times now I've been thinking "I wonder if would work?" (most recently, that was which keto flour would work best as a sourdough starter) or "I'd love a recipe for " and each time you turn up with a great video! I baked your bread recipe (removing any sweetener) and it was wonderful (though I didn't get quite the rise I wanted). Thanks for making keto (and staying in due to coronavirus) easier and getting me very interested in baking keto breads and desserts. I'm looking forward to trying this recipe soon.

Just found your channel! Great video thanks! I love making bread of all kinds including sourdough, but since beginning keto, I have not made any! I am going to try your recipe! One tip I did when using the pizza peel...was to use parchment paper and slide the parchment paper onto the stone too...made it much easier in my opinion... thanks for sharing!!

If you use yeast frequently, you might want to invest in bulk dry yeast that is vacuum packed and then stick it in the freezer once you open it. With a few loaves of bread, it's paid for itself. I might comment more as I keep watching, but I'm excited about this as I bake bread in all forms.

You look amazing! I too lost a lot of weight and use to hid my saggy extra skin arms. I was 289 and now 160lb, so there is a lot of saggy, extra skin. It’s hard in to make the leap of I just don’t care, I have saggy arms and legs… get over it. If someone has a problem with me that’s their issue not mine! Keep it up and show those beautiful arms with self confidence! Way to go!!! God Bless!!!

I have now made this bread with a sourdough starter and with a levin made with active dry yeast to make an artisanal loaf. I find I get a first rise and never a second one. I’m going to have to start messing with the rise because honestly, I think this is a bread that will be better served by having a single rise. FYI the levin works just as well as the sourdough starter so if you don’t wanna do the starter, make a levin with the same proportions as her starter and then add yeast (I add a tablespoon but you can probably get away with less). Then let it bubble for about an hour so the yeast does it’s think and then add 200g of it to this recipe.

Hi! Yes making sourdough is a long process. However you can cook it after the first rise. I’ve done it and it came out great, just not as dense. 😊

Made this bread and it is everything! It’s really sour and I love it. I was wondering if it can be made in a Dutch oven instead of the Pizza block. I had to bake it longer and it was still a little damp in the middle but was still good 😋

I made the regular lupin bread she has in a dutch oven, so I’d be very surprised if you can’t. Preheat it properly (I usually let it it sit in the oven while it’s heating over an hour).

@@mannyc7747 I've had this problem too. What you want is an instant read thermometer. Stick it into the bread in the oven and test it's temperature. Sourdough you want 210 degrees and it's finished. Normal white bread 180-190 degrees. You can cook it less or more to taste. (Eg, I like slightly undercooked white bread.) It also helps to use a scale to make sure your measurements are on point, and if you go to her web page for the recipe and click download recipe you'll get the most up to date version which can differ from the youtube version. I've found that helps me quite a bit.

Can’t I mix/knead this in my KitchenAid stand mixer using the dough hook? I see you have yours right beside you un-used but I really want to use mine again since I had to give up baking non-keto sourdough.

Anyone in the UK who bakes has a set of American cup and spoon measures and if not, the conversion is online. This looks so good I wish I could tolerate lupin flour - there’s nothing else quite like it.

I wept, truly! I had just "perfected" my sourdough bread making and then I went Keto shortly after. Of all the things I missed of my high carb lifestyle sourdough I missed most. I can't wait to try to make this, I'll pickup some Lupin flour and begin making my starter right away. One question though; I've heard Lupin flour was quite bitter do you find that true or does the fermentation process out the bitterness?

Hi James! Lupin Flour can be a little bitter when used plain. But when you incorporate it in to recipes it blends very well and there’s no bitter taste at all. As for the sourdough starter I don’t find there to be any bitterness to it. Once mature it gets that nice sweet vinegary smell that we know and love about sourdough. 😊

Hello, I am very thankful for this recipe. I have made this recipe 4 times so far. Following the recipe and baking instructions it is wonderful. But because I would like to use my new bread machine, (I know, a person on keto buys a bread machine, how silly). Anyway two of the times I have tried to do just that. I altered the knead and riseing times but both times it was a fail. Do you have any tips for trying this yummy sourdough in the bread machine?

Here is a hint from my mother. We couldn't wait for the bread to cool. Use an electric knife. Works really well, and warm buttered bread is GREAT!

Hi!, I really want to try this. Can I use regular flour sourdough starter, and then use the keto flour blend? My theory is that in that levain the carbs will be fermented and eaten, so I’ll still have a keto sourdough. In terms of feeding, using a regular sourdough starter with regular flour would be so much easier. :)

I would love to know the answer to this too. Tried sourdough keto bread this week with some success, but was wondering if cup of ripe starter was lots of carbs, or not. Ordered lupin flour so going to try this. Mx

@@marionferra3324 I’m going to try it this weekend will let you know! I’ll be able to probably eyeball how much flour and carb there is in the recipe based on the 200 gram starter. But it should be at the very least diabetic friendly!! Making it for my dad. :)

Only a subset of the carbs will be eaten using normal flower. However, you can in theory feed a normal starter with lupin flour then in a week or so use it to make bread as by that time most of the carbs will be eaten by then.

So you heat the pizza stone at 500 degrees for 3.5 hours, and you cook the bread for 25-40 min, also at 500 degrees?

Hi Julia! Yes, this has given me the best results. But if you don’t want to run your stove that long at least heat the stone for 1 hour. And don’t forget to lower the temperature to 440 when cooking the bread. 😊

Thanks for sharing the recipe, the bread turned out looking great. But, I've been baking keto breads since 2019, and I tried the xanthan gum several times in my recipes but the bread ends up rubbery each time I use XG, even with using the tiniest amount. And I really don't miss on the texture if I skip it! I would really love to hear your opinion, Samyah and all the keto bakers who are reading my comment.
