@@stagecoachist If u don’t have u proofer you can… Turn your oven to 150 degrees then turn it OFF after 5 minutes and leave the door open for 2 minutes. Do not add a bowl of hot water to the oven “some ppl do this” but my flour does not like the humidity. Then use your over for proofing :)

I need to study diabetes more and see what I can come up with to help :) but if u substitute my flour for white flour and allulose for sugar you’ll be doing so much better! And avoid all “sugar free” items. 90% are tricks and they are actually bad for a diabetic.

I tried this last night as a simple mushroom and bacon pizza. It was good. After eating last night I saw a Blood Sugar reading of 155 two hours after eating. This morning I had the remaining 3 slices for breakfast (I know!). I had a fasting Blood Sugar reading of 114. Two hours after eating I had a Blood Sugar reading of 125. This definitely satisfies the urge for pizza without getting a horrendous Blood Sugar spike.

I made this dough into the shape of a rectangle, fully cooked it and cut it into eight pieces. I was able to freeze them and use them individually with fresh toppings and a quick oven warm up. Just delicious!

Victoria, I love your channel! It's my new favorite. I made your self-rising flour today. I used a cup of it to try making crackers. I miss crackers so much! Well, I added a tablespoon of butter to your flour and a few tablespoons of water and rolled it out thin. Voila! Crackers that taste very similar to the saltines I've been missing. Now I can make salmon patties, chili and who knows what else that needs crackers. Thank you. Thank you for being such a pleasure to watch and for inspiring me to push things further. You're amazing.

Thank you for bringing back pizza. I have been Keto for 5 years and no recipe out there can compare to yours. I made it while I was recuperating from Covid 19. I am mammography Technologist and got sick from getting it from a patient. After being in bed for 3 days, I had a craving and saw your video. The pizza turned out wonderful. You call it “wax paper “ but it looks like parchment paper. If you spray water on your counter then place your parchment paper on it, it won’t move around on you. Also, you can dip an offset spatula in water and smooth out the dough or lightly spritz the top of the dough then smooth it out. Just suggestions 🙂

I'm gonna have to go buy a new notebook just for your recipes. You have inspired me to get back to my baking from home for friends and family. This is my new pizza recipe! For so long, I got so tired of all the eggs, cheeses, chicken and cauliflower trying to make a decent crust. Did not work. But this works beautifully. I pre-baked the crust (for extra crispiness) and it tasted so good. Happy to have good pizza back on my menu. At one point I told my husband this way of eating should be called the "Great Pretend Diet". Pretend you're eating this or pretend you're eating that. Nothing will taste like the flours we grew up on, but this is pretty darn close. Your journey into the keto world is helping so many people. OMG, I just tried this recipe and it is simply THE BEST! After not having any pizza for over a year since I started on my KETO journey, because I could not find a good recipe for the crust, I now once again have a good homemade pizza dough. I once tried a fathead dough for pizza but did NOT like it. Cheese on the top and also IN the dough was in my opinion "overkill" (not to mention forcing me to consume an excessive amount of calories which is just unhealthy!) Thank you so much for this ground-breaking keto recipe. 👍 I prefer a crispy crust so I did pre-bake my crust alone in the oven for about 12 minutes before adding my pizza toppings to the top. It turned out perfect! 🍕👌From now on, this is definitely my go-to keto pizza crust recipe.

I'm back! I don't mean to be a pest but I just used this to make Pan Pizza and it is Fantastic Victoria! Rolled a half-recipe to 10" and let it rise in a 10" cast iron skillet with 3T Olive Oil in first. After 1 hour I brushed on SF barbecue sauce and put Monterey Jack around the rim and Mozz in the middle (gives the crispy edges). Topped with Aldi's pulled pork, jalapenos, onions and baked 425 for around 15 mins until I saw fried cheese on the rim. In Little Piggy Heaven I was! Thank you Victoria, you are a great chemist (alchemist?) and wonderful chef!

This is everything you claim it to be, and is hands down the best keto pizza crust I have tasted over the past 7 years. I have tried several versions. Your recipe is one that I actually enjoy, instead of just tolerating. I made 2 - 9" pizza's and put one in the freezer for later. I reheat them in my air fryer and the crust crisps right up again. Praise God, you are a true blessing.

I love this pizza recipe so much. Husband, not keto, loves it too. We have already made it 3 times in less than a month. Tonight’s version had chunks of roast chicken, mushrooms, onion, red peppers and jalapeño cheddar on top. I pre-bake the crust, as suggested, and the crust comes out perfectly crisp and browned. No more soggy pizza that tastes like the cardboard it came in. ❤❤❤

I tried this recipe and it was the best keto pizza I ever had. The crust is very good. I won’t go so far as to say it is as good as real pizza from a restaurant, but it is better than any frozen pizza I ever ate. I am going to experiment with it and try some different seasonings.

I made this tonight and oh my, this is absolutely the best low carb pizza crust I have ever tried. I did pre-baked it as instructed in your notes for about 10 minutes and then put the toppings on and baked .. so very good!

Victoria I made this today in a pizza oven on my smoker using your recipe. I had it about 700 degrees and cooked it about 7 minutes and it was fantastic the best pizza crust I've had on Keto I will definitely be using your flour for more of your recipes like the cinnamon rolls! Thank you!!

I made this and it was pretty darn good. I think the thinner the better. Maybe even cracker thin and I will add salt to the next mix as well. I pre cooked mine until the bottom was getting brown then pulled it out, added toppings, and back in oven until done. Also, I think it takes more sauce than the normal pizza. I made my sauce using Red Gold canned tomatoes blended them a little, added some Besti sugar to taste, Mexican oregano, salt and cooked for about 10 min on simmer. I ordered 2 silicon 12" round mats to roll the dough for the next one and will report back on the thinner version.

Hey there Victoria Im a Vickie too lol. Ive been keto now for around 8 years. Im positive this yeast pizza dough is the bomb. Ive been using your flour for a while now which is absolutely wonderful. Anyway ive been having your 90 minute bread which in my microwave around 85 minute bread works best. Anyway i was hungry and wanted something quick. Ive had these personal pan pizza pans forever. So i took your 90 second bread added a dash of salt and garlic powder. Added the 3 tb of water sprayed one of my personal pizza pans wet my hands and spread the dough out the size of my pan. Placed just the dough in 425 degree oven 5 minutes. Took it out placed all my toppings then back in oven 10 more minutes. Oh my God it cut so easy and was crisp enough to pick each piece up. It was by far the best keto pizza ive had in 8 years! Im so excited i had to share. Thankyou thankyou thankyou!!!

First, thank you! It tastes wonderful and not eggy nor like a veggie!!! Second, was too 'wobbly' for hubby so the next one I first baked the crust, flipped it and baked it again. Let it cool, then added the sauce and toppings and baked the whole pizza. AMAZING!! THIRD, after I baked several just crusts and cooled them, I froze them separately. They were amazing too! Okay so this is by far the best keto pizza crust! Cuddos! Great job. Not just like pizza crust, but definitely delicious. I par baked. I’ve had plenty that have an unusual taste because they contain psyllium husk. And I am over the fat head dough. Great job, Victoria. Oh and I made the 2 minute bread this morning. Absolutely delicious, hubby agreed and he isn’t Keto! Both made with Perfected Flour.

Can you do a 3 day ferment in the refrigerator in a dough ball form. Add a little oil on the dough then cover it in a container. Then you can take it out on the 3rd day, bring it to room temperature, then roll out. I think you will be very, very pleased with it. The flavor should be even more pronounced! Of course, this too is to test if your perfected keto flour reacts the same way when fermented like plain white flour... Please! Thank you.

Tip: you can use plastic gloves coated in oil to hand shape the dough, or just oil hands if you don't mind. I oiled a pizza pan and worked it by hand onto the pan.

The cheapest and most simple proofing box I've ever designed was using a metal turkey roasting pan, with a lid, and shining a 200-watt (bulb) light on the outside of it. It works perfectly!

Lupin is very bitter, brands do make a difference and so does adding sweetener, but lupin should never really be more than 25% of the flours used due to the bitterness. I was just discussing the possibility of having to add aittle almond flour in a cake mix, but maybe not a bread mix?

I've been making separate pizzas, one gluten free for the family and one for me using ground chicken as the crust. It's definitely not pizza! I'm excite for all the ingredients to come in so I can make one pizza for us all!

Hi Victoria. Have you made this using your new standard flour with the 3 Tbs baking powder added? This looks so good with the original self rising flour that I don't want to change the flour recipe if it won't taste as good. I love how you post Jn 3:16. People need to know just how much God loves them. ❤️

So happy to finally make pizza!! Only one problem, I can't find the Modern Mountain oat fiber. Currently out of it on Amazon. What would be the next oat fiber to purchase. I can't wait to use some of my own recipes and turn them into keto. Thank you for bringing this keto flour to us. You've made our life so much easier. ❤️

Love your channel! I Purchased a lot of ingredients and decided to make your pizza, studied your video several times. Also weighed everything in grams. My pizza dough seemed a little dry. I did try to add a little water. Proofed the pizza, add the toppings and baked. I used your new perfected flour with almond flour. The crust held up nicely but tasted dry and cardboard like. Would appreciate any recommendations that you might have. Thanks again.

Ok, I'm obviously doing something wrong. I followed your self-rising flour recipe to a 'T' (I even bought a new scale to ensure I have exact grams of the ingredients). The only thing I have not linked by you was the almond flour (from another retailer). I had to toss the first two batches (first one used an older, not-accurate scale; second one proved I was using baking powder that expired in 2017!!). On my third batch now. I even bought a stand mixer specifically for this - my dough came out looking like whole wheat, not light in color like yours. My crust did rise a tad so I added my ingredients and baked. It came out very dense and tasted like whole wheat, not the pizza crust I was hoping to enjoy. So obviously, I'm doing something wrong. I will buy the almond flour you use and try the whole process yet again. I am not giving up!!
