I realize that piano probably isn't actually old, but it sounds a lot like my hundred year old mellow piano... and it makes that soft clicking sound from pressing the keys. I love the technique of an open piano allowing that brush of friction to be part of the beautiful sound.

He mics it really closely, and plays softly so it picks up a lot of the mechanical sounds of the piano. He also puts a strip of felt between the hammers and the strings, which gives that classic "felt piano" sound. I'm not sure if he's the one that came up with that idea, but there are audio sample libraries of "felted piano" that have his name on it - it's kind of his distinctive sound.
