Sir, Good job on removing the pigs hair instead of removing the whole skin. It saves a lost of good meat and crispy skin. Thats how we do it here in Asia particularly here in the Philippines and we call it lechon., all we do is put hot water and remove the hair. Good job sir. Happy eating.

Yep, we always scraped em back in the 50s and 60s. We big, cast iron scalding pots and scraping knives. Nowadays most folks skin em, too bad as people are missing some great flavor.

We would build a fire under Neath a 55 gallon drum with water dip them and scrape them most all old timers did it.

Yes similarly we cook country chicken in Maharashtra , India. First we remove all the feathers by dipping it in hot water and then after cleaning it we burn the skin and cook it.

This reminds me of growing up in South Carolina. When the first frost hits, we cut greens and butcher hogs. Used to boil water in an old cast iron bathtub and dip the pigs in it. scrape the hairs right off. Rendering lard and eating fresh cracklins. The good old days. Thank you for taking me back down memory lane my friend.

when my grandparents slaughtered a pig they used to cover the hog in straw and then set it on fire to singe the hair off the carcass afterwards with a knife and some water they would scrape the singed hair off the skin and clean it before butchering it

Those who just visited the wonderful state of Louisiana The Sportsman's Paradise loved it, just imagine those who live there! The diversity is so great. I love it. I'm new to hog hunting, but both sides of my family are from Louisiana so I feel like this will help me get closer to my roots. My dad cleaned the last hog his family owned in 1980. The year before I was born. I shot my first hog the other day, but it hadn't been cut yet so I just left it. I hunt at night too. Again I appreciate this video.

Great video. I recently watched a story about wild hogs becoming a problem in the Northern States. They are devastating crops in Pennsylvania, New York, Maine and into Ontario and Quebec Canada.

Hey Ken! I love your videos. I hunt deer myself. I'm always wanted to hunt boar. I've heard they are very destructive. My father has hunted boar. He said they have a gamy taste to them. I've watch on your videos, and it seems like you have a great way of cooking them. I'm sure you have perfected the recipe over the years. I sure would love to try some one day. A few of my dad's friends hunt boars and trap them. I want to tell ya you alway's have great videos. I'm looking forward to seeing more. I was getting hungry watching those pigs smoke. lol

We'd soak our wild Florida pigs in pineapple juice to help with the game taste in big coolers and dump ice on them to keep it cold. Quartering them up may be easier for others. You can do this for however many days as you want to adjust the taste as long as they stay cold. We did it for two days I believe. Then season or inject according to taste.

Thanks Vance! Not a problem! The doors are hog panel famed with square tubing or pipe. They just fall in a channel.

I have scrapped quite a few pigs/hogs. That is hard work, but worth every minute. Nothing better than smoked fresh pork. Like your seasoning also, you just use what is in the kitchen don't have to go shopping. Thanks for the vid Ken.

My maternal grandmother told me stories about when she was little, and families in the country got together to butcher hogs in the fall. It was less work over all to have everyone cooperate with the work, than everyone doing their own pig alone. She told me about how one big hog somehow got loose just before it was to be killed, and went charging off after a city visitor who was barefoot, and just barely made it up over a fence. I'm salivating looking at the crispy skin on those spilt open hogs.

Now that I am 66, and on Chemo and have Stage 3 Copd- I probably won’t be able to get any- Don’t know anyone that makes this, but wish I had some!
