This recipe of Baingan Bharta is different as not just the brinjal but also the green chillies are charred over direct heat and mixed together lots of fresh spring onion greens to create this spicy and tasty dish!
KHANDESHI BAINGAN BHARTA
Ingredients
1 large brinjal (baingan)
3-4 light green chillies
2 tbsps oil + for applying
3 tbsps chopped fresh coriander leaves + for garnish
2 medium onions
½ tsp mustard seeds
½ tsp cumin seeds
2 tbsps raw peanuts
2 spring onions, chopped
Salt to taste
2 tbsps roasted peanut powder
Bhakris to serve
Method
1. Apply a little oil over the brinjal and cook over direct heat till charred from all sides. Take it off the heat and place on a plate to cool slightly.
2. Similarly, roast green chillies over direct heat till charred from all sides and put into a mortar and pestle. Add 1 tbsp coriander leaves and pound to a coarse paste. Set aside.
3. Finely chop onions and set aside. Peel and mash the brinjal.
4. Heat 2 tbsps oil in a non-stick pan, add mustard seeds and cumin seeds and let them splutter.
5. Add raw peanuts and sauté for 1-2 minutes or till they turn crunchy. Add chopped onions, mix and sauté for a minute.
6. Reserve spring onion greens for garnish and add the whites into the pan and sauté for 2 minutes. Add pounded paste, mix and cook for a minute.
7. Add mashed brinjal, mix and cook for a minute. Add salt, roasted peanut powder, spring onion greens and remaining coriander leaves and mix well. Cook for a minute and take the pan off the heat.
8. Transfer the bharta into a serving bowl, garnish with coriander leaves and serve hot with bhakris.

Hari mirch ke sath adrak aur lehsun bhi dalana bahut tasty lagata hai aur sath me kadhi ho to maja hi maja. Agar apko groundnut nahi dalane hai to mat dalo. Aur spring onion ki green leaves add karna chahiye Bharta mein.

I do this as my parents do it The eggplant is roasted on gas/tree twigs Then green chili too Make thecha of green chili, garlic, corridor leaves and salt( make it little hot with chili) Inside kadhayi put some oil, add cumin powder very little, then add roasted eggplant without skin and beaten in a particular vessel, then add thecha as well as lots of small cut green leaves of onion. Add salt according to the taste. With this bharta, make kalnyachi bhakri or bajri/jwari bhakri or bajri puris

खान्देशी भरते में प्याज नहीं जाता, और ना ही भूनि मूँगफलियाँ. लहसून जाता है, और सूखे नारीयल की स्लाईस जाती है. .. आपकी रेसिपी अच्छी हो सकती है. पर इसे खान्देशी भर्ता कहना गलत होगा सरजी.

You can skip groundnuts, but mainly Khandeshi recipes include it in. It enhances the flavor.

Recipe is correct but in khandeshi baingan bharta style we put groundnut powder and not whole groundnut. Groundnut is widely cultivated in khandesh region and hence groundnut and its powder is widely used in all khandeshi recipes.

Yes it's depends on how you prepare. no one can beat khandeshi baingan bharta bcz we don't add tomatoes in it. Also try baingan bharta with adding Suki bombil in it. 😋

@@DineshRajput-xr7vr that's punjabi way of cooking. It's recipe is different altogether. In Khandesh region of maharashtra, there's no chilly powder, no tomatoes and no whole onions

गलती 1 : लाल प्याज खानदेशी भरते मे नहीं जाता. सिर्फ पात वाला प्याज जाता है. गलती 2 : जीरा , राई का तड़का खानदेशी भरते में नहीं जाता. गलती 3. खानदेशी भरते में नारियल के स्लाइस जाते है, ग्रेटेड नारियल नहीं जाता.

It’s look like northern Thailand namphrik if no fry in oil. I think within use oil without tadka much better much real taste. Kya hai bhaiya baigan ki toh maa ki aankh ho gayi na. My mother don’t use lot of oil and others ingredients but still taste better. Roti is roti paratha is paratha so this is not bharta. Eako raita bana diya yaar

@@zaibiabidi6395 rai to bhut sari सब्ज़ियों में डलती है पर खट्टास नही आती है। राई की खट्टास के लिए तो पानी का इस्तेमाल किया जाता है उसमे खट्टास आने में काफी समय लगता है।

Ye regular bharte se alag hai, isme Jo fresh seasonal sabzi (spring onions, garlic leaves, chillies) jati hai na uska taste sabse badhiya hota hai aur khatas ki zarurat hi nahi hoti hai... Peanuts bhi crunchy texture ke liye dalte hai, kabhi khaoge to pata chalega iska Kya swad hota hai.
