recipe of khandesh style
vangyache bharit or
baingan bharta.

Ingredients:
. 1 kg green brinjals
. 1 cup chopped spring onion
. green chilly
(as per taste)
. salt
(as per taste)
. 1 tbsp peanuts
. 4 tbsp oil
. 10 -12 garlic cloves
. chopped coriander leaves
. 1 tsp cumin seeds
. Musterd seeds
. pinch of carrom seeds
Method:
. Wash brinjals and puncture
it with knife or needle.
. Grease little oil on
outer surface of brinjals
and roast it directly on
flame till becomes soft.
. Remove outer skin
and separate pulp.
. Mash the brinjal pulp
properly with masher
till it becomes smooth.
. Roast green chilly
on tawa by adding
drops of oil.
. Transfer roasted green
chilly ,garlic cloves and
pinch of salt in mixture
jar and crush it for
coarse paste.
. Thecha is ready,
keep aside.
.Heat oil in a pan.
. Add musterd seeds,
cumin seeds and carom
seeds and allow to crackle
it.
. Add peanuts and saute
it till becomes crispy.
. Add thecha and saute
it for few minute.
. Add chopped coriander
leaves and spring onion
and saute till becomes
soft.
. Add roasted brinjals
pulp and salt.
mix well.
. Cook for few minutes
and switch off flame.
.Add chopped coriander
leaves and mix it.
. Khandesh style vangyache
bharit or baingan bharta
is ready.
. Enjoy with wheat,jowar,
bajra,kalna roti,or puri
along with butter milk kadhi
spring onion,fried green chilly.
