Kheer er Luchi
Servings - 6
INGREDIENTS
All purpose flour - 200 grams
Ghee - 1 tablespoon
Salt - 1/4 teaspoon
Water - 100 milliliters
Oil - 1 teaspoon
Khoa - 150 grams
Desiccated coconut - 30 grams
Sugar - 2 teaspoons
Cardamom powder - 1/4 teaspoon
Salt - 1/4 teaspoon
Oil - for frying
Milk - 1.3 litre
Milk powder - 100 grams
Sugar - 80 grams
Ghee - 1 tablespoon
Almonds - 1 tablespoon
Cashews - 1 teaspoon
Pistachios - 1 tablespoon
Cardamom powder - 1/4 teaspoon
Pistachios - for garnishing
PREPARATION
1. In a bowl, add 200 grams all purpose flour, 1 tablespoon ghee, 1/4 teaspoon salt, 100 milliliters water and knead it into a dough.
2. Add 1 teaspoon oil and knead it into a dough.
3. Cove it with plate and rest for 15 minutes.
4. In a bowl, add 150 grams Khoa, 30 grams desiccated coconut, 2 teaspoons sugar, 1/4 teaspoon cardamom powder, 1/4 teaspoon salt and mix it well.
5. Take a ball from dough and flatten it with the help of a rolling pin.
6. Place prepared Khoa stuffing on the dough circle. Seal the edges completely so that the stuffing does not comes out.
7. Now, flatten it with the help of a rolling pin.
8. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
9. Remove it from heat.
10. In a pan, add 1.3 litre milk and stir well.
11. Add 100 grams milk powder, 80 grams sugar and cook for 5 - 6 minutes.
12. Add 1 tablespoon ghee, 1 tablespoon almonds, 1 teaspoon cashews, 1 tablespoon pistachios and mix it well.
13. Add 1/4 teaspoon cardamom powder and cook for 3 - 4 minutes.
14. Add fried puri in it and cook for 2 minutes.
15. Cool for 1 hour.
16. Garnish with pistachios.
17. Serve.
