Umpa is yet another healthy south Indian breakfast recipe. It is also known as upit in Maharashtra. It is prepared using semolina or rava or sooji. It is very quick and easy recipe. Good thing about upma is you can add different veggies to make healthier. I will tell you many tricks and tips to make this upma fluffy and soft nut not sticky. Ingredients:
• 1 cup coarse Suji / Semolina
• 1 tsp Ghee
• Oil
• Raw Peanuts
• 1/2 tsp Mustard seeds
• 1/2 tsp Cumin seeds
• Curry leaves
• 1 tsp Chana dal
• 1 tsp Urad dal
• 1/4 tsp Hing
• 1 tsp grated Ginger
• Chopped green chilies
• Finely chopped Onion
• Salt to taste
• 1/2 tsp Sugar (Optional)
• 2 1/2 cup hot Water
• Finely chopped Coriander leaves
Method:
• Heat up a pan on medium heat and add suji.
• Add ghee and dry roast suji on medium heat for about 6-8 minutes.
• No need to roast longer or change the color of suji.
• Transfer the suji into a plate.
• In the same pan add oil and peanuts.
• Roast peanuts get light brown color and turn crispy.
• Transfer the fried peanuts into a dish.
• You can fry cashew nuts along with peanuts if you want.
• In the same oil add mustard seeds and let them pop up.
• Add cumin seeds and let it splutter.
• Add curry leaves, chana dal and mix well. Add urad dal, hing and fry everything for about 30-40
seconds.
• Add ginger, green chilies and mix well.
• You can add finely chopped ginger or skip it completely.
• Add onion and fry until it gets caramelized a little.
• Add roasted suji, salt, sugar and fry everything well for just 2-3 minutes.
• Adding sugar is optional. You can skip it if you don’t want.
• Turn the heat to low and add hot water.
• If you want dry upma then add 2 cups hot water and if you like very soft upma then add 3 cups
hot water for 1 cup suji.
• Mix in quickly, cover and cook for about 5 minutes on low heat.
• Remove the lid and mix upma well once.
• Add coriander leaves and mix well.
• Upma is all ready.
• While serving, garnish with fried peanuts or fresh shredded coconut.
