I got some of this at a local Cambodian store. I cooked it on the grill, but they all split open and fell apart! I managed to save them and they tasted great, but how do I keep them from “exploding?”

Sorry to hear that. When you bought them fresh from store they are very wet. So, next time leave them to dry in room tem. for a day or 2 but not to dry.
