I followed the sponge recipe and it produced a beautiful light, fluffy and succulent sponge. NO CRACKS! I had an 11.5” x 15.75” sheet pan lined with parchment paper and it worked fine. The sponge rose all the way to top of pan. I added hazelnut extract to the sponge and made a Nutella Swiss buttercream for a Christmas Buche chocolate de Noel…. delicious. Can’t wait to the try the strawberries and cream version presented in this video. Thank you Chef Alexandr

Здравствуйте Марина! Да, можно без желатина. Тогда Вам не нужно будет молоко. И увеличить количество крем-сыра, чтобы пропорция сливок и сыра была 2:1. :)
