Late to this, but it's awesome see chefs I look up to understand the versatility of cannabis outside of its recreational psychoactive component. There are a lot of flavor complexities in its different forms that doesn't necessarily exist to get you high, and chef Douki really seems interested in discovering those.

This sounds fantastic. Love kimchi certain strains of cannabis flower have certain similar chemistry to certain foods. Afghan strain cannabis goes with celery for example . Try making udon noodles with some decarbed flower dust on top

I love how they asked a Korean Chef to use cannabis with no experience with it. Not knowing, cannabis/weed itself is straight up illegal in S. Korea. Still it's interesting to see how sophisticated (to a degree), Chef Dueki does put his spin + flavor on it. Not bad.
