I think you did a huge amount to stimulate interest in sharpening especially among the younger audience. Instead of some old dude in a cluttered, dark garage we have a young, enthusiastic and always well presented guy in a clean space with well-made videos. And yes, you are a nice guy. Back to this video again and it helped me so much! Ive had an S1 6000 for 10 years thinking that would get me everthing I would need. Without your help I would have been stuck thinking I couldn't sharpen a knife. I had to outsource all the sharpening for 10 years! Expensive!! I just bought the Cerax 320, and the new Cerax 1000/6000 combo as my first Waterstones. I’m an experienced sharpener with all the other “styles” of stones, but this is my first jump into the Japanese pond! Looks like I made great choices.

Are you satisfied with the cerax combo still? I'm thinking about getting it to try out water stones without having to make a large investment in Shapton or Naniwa chosera. I've been using Ultrasharp diamond stones and Spyderco ceramics for a few years now, and while they get it done, I get no enjoyment out of using them.

@@Jeremy_810 I know this is an old post but check out the Imanishi 1k/6k combo stone. You can grab it for 55 dollars right now from CKTG. Best combo stone I've ever used. It's big and thick and harder than the King or Cerax stones (some people like harder stones and some people don't). It will last you a lifetime though, it wears very slowly

This is a well balanced review of the detailed, technical differences between the two stones. Good job. To me though, there does not have to be a "winner" chosen. The differences, such as time involved in sharpening a blade between the two stones or the feel of the blade on the stone, may matter greatly or not at all, depending upon the user's preference. Regardless, I am glad these differences are evaluated and illustrated.

For anyone considering the King I would highly suggest the Imanishi 1k/6k combo stone instead. It's bigger and thicker and you can get it for around 50-55 bucks. It's a lot harder than than the king and doesn't wear as quickly. It's probably a little less "snappy" in the feedback department but it has a very smooth, consistent feel. I have dozens of stones from Shapton, Naniwa (🖕😆), Suehiro, Imanishi/Arashiyama/Bester and I still grab that stone a lot. Would take it over the King any day of the week. Both sides seem true to grit. You could buy that stone and a good 220/320 (Shapton Ha No Kuromaku 320 is going for 35 dollars on Amazon) or a diamond plate and pretty much be set unless you're sharpening super high carbide steels

My biggest gripe is a certain company that sells knives in the US, but quite a few places do this. They claim that yellow is for home use, white is for apprentice/journeyman and blue is for the master, which isn't necessarily true, because that is knife and steel (white 1 for example) specific. Hitachi blue is certainly steel for professionals, and it is certainly ideal in workhorse knives like gyuto, santoku and deba, but when cuts mattered (nigiri sushi or sashimi) white is preferred with Honyaki white 1 from a good smith is considered the best. With Japanese knives, the price is not a reflection of quality. Blue steel knives are more expensive because the steel cost more, production wise it is very procedural and suitable for apprentices (which is why some smiths delegate them to make). It also pains me when companies tell beginners to "remove the microbevel". Not saying that couldn't or shouldn't be done, but I don't believe that's not the right thing to tell beginners who may not necessarily know what they are doing, or want out of their knife. When beginners see chefs on youtube filleting fish using their yanagiba and try that themselves, problems could happen and they will end up blaming the knife/maker, or Japanese knives in general.

Ryky, thank you for the videos. I have subscribed to your channel. Would it be possible for you to do a short video or at post somewhere a more objective list of terminology definitions? In this video you have used "hand feel", tactile, feedback, and "snappy" without explaining specifically what each of those mean to you. For some of those I can guess at their meaning, but others contain more subtlety. For example "feedback must mean that you can tell when you have rocked the blade off of the bevel. How do you know? Has the resistance increased or decreased? Has the sound changed? if so, how did it change. I think you get what I'm asking. An explanation like that would not only make the reviews clearer IMO, it would add a level of detail to the instructive qualities of the video as well. Thanks!

What are your thoughts on the cerax 700? My old 5 year old King 1000 is getting a bit thin. I'm thinking of getting either a chosera 600, cerax 700, or king 800 as a semi replacement. I would like a slightly courser stone to do sharpening on. I have a couple polishing stones to finalize the edge. I don't know if you've ever used a King 800, but I've seen a chosera 600 and cerax 700 in your collection. I was wondering how you would compare them with a King 1000. Also my autocorrect keeps wanting to change "chosera" to "cholera" and "cerax" to "cereal"... which makes me lean more towards the cerax since I much prefer cereal to cholera.

Can you address the longevity of stones in comparison? Which one gets worn more quickly and therefore requires more frequent flattening? By the way, Cerax 1000/3000 combi is also under $60 too. Would you prefer that over KDS?

My co workers old head chef/teacher gave him his old kds 1000 maybe 1200 stone i was told it was almost as thick as brick and it is a lil over a decade old. As of now it is still a good thickness. It dished on both sides and i corrected it for him. Id say its as thick as maybe 2-3 cell phones lying on top of each other.

I also have a cerax 700 that it's nice but I can't figure out the soak time. I think for my stone 30 min is to long and it make a tone! Of slurry and where's down extremely quickly I don't like that. I think I'm gonna time it for 20 minutes cause sometimes it doesn't do that and I really do in joy not having the really thick slurry.

Great videos! I recently purchased my first set of what I would consider decent quality kitchen knives when compared to the $3-$5 Walmart knives I was using. The knives I’m referring to are the Mercer Genesis series 8” chef knife, 7” Santoku, 8” bread knife, 5” utility knife, 3.5” paring knife and for shits and giggles, the Victorinox Fibrox 8” chef knife. I’m now in the market for sharpening supplies. In your opinion, what are the must have items for someone trying their hand at sharpening for the first time? I have an overall budget of around $80 which can be flexible if necessary though I’d like to stay at or below that if possible. I just finished watching this video and was set on the Cerax 1000 until I saw the Cerax 1000/3000. Being this video is about a year old, has your opinion changed? Is there a better option at that price range? Do you have experience with the Cerax 1000/3000 and 1000/6000?

Honestly I've always sharpened with a cheap chinese diamond stone, 400 and 1000. Never had a " normal " stone. These stones are for people that don't wanna buy chinese diamond stones, want normal stones etc...

Hi from Alaska , I love your videos, thanks for all your great work =) I just bought the Wushtof Ikon and the Cerax 1000. My question is, what kind of lifespan can I expect out of my Cerax with only light to moderate use ? I know that Ikon will last me a lifetime with proper care , so I also wanted to have enough Whetstones to last a lifetime. I was wondering if I should buy one or two more of the Cerax just for back up . Thx !

Casually sharpening a few kitchen knives a stone will probably last a lifetime. A busy sushi chef will go through a stone in a year or so. The harder the steel, the more wear on the stone, to flatten your stone use a sabitoru rust eraser medium grit 👍

@@samlee2562 A rust eraser might remove loading but it's not gonna flatten your stone very well. You want a proper dressing stone or diamond plate for that. Even for removing loading a proper nagura is a better choice, I find that the rust erasers can leave little particles on the surface of the stone

Hi! So when I was in Japan a knife maker that sold me my first Japanese knife recommended the King KDS. Now, 8 months later the 6k side has some darker spots the size of a grain. Those spots almost can't be felt by the hand but im just wondering if you have experienced the same thing? Or if I did something wrong to my stone.

I use the king 8000 gold stone to finish off straight razor honing. From there onto a strop with some autosol paste. Razors pass the hanging hair test well.

So I have the naniwa professional 400 1k 3k I don't like to use them that much because of the price I sharpen allot of other ppl knives and I don't want it to kill me in price. So I normally use my king deluxe 1k and a cerax 6k But I'm really wanting another stone or 2. would you think the cerax 1k would be worth it? Or Would you Think I a cerax 320 and then maybe a cerax 3k? I do t think the rika 5k would be worth it cause I have a cerax 6k. i also have the king 6k that comes in that little base it's a tiny 6k stone was thinking maybe get the full size Murray carter uses. But then I know you got more suehiro vids coming out. idk if I should wait for that but ithink that's all the more pricey line up and again allot of this is what I charge ppl a small amount of money. It works cause they get a sharp knife and I get to sharpen win win If you can't tell I'm really itching for new stones

if you are looking to replace everything you have, then yeah, pick up the cerax 1l, and rika 5k. if you want to add, i would get the 320, since it's GREAT. i wouldn't get the rika 5k, since you already have a 6k. but i love the rika so if you want to sell the 6k, i would seriously pick up the rika.

Really good points in that. I'd rather build them replace since I really do like my stones I get excellent results off them. So I think the 320 is the way to go. Side note do you know if the king deluxe is the max performing King stone? And what's the big 6k kind stone Mary Carter uses?

Aloha Joey. In his comparison of the King 1000 vs the Chosera 800, Ryky recommended soaking the King for at least 30 minutes. He also said that an additional 10 minutes would bring out the best the stone could offer. Bear in mind that was said 3 years ago and he may have revised his opinion since then. Hope that helps!

I would have gone for the KDS combo but noticed that many online retailers are actually selling a cheap copy, not the real KDS stone. On top of that, the way they ship is poorly done and many end up with a chipped stone. Ended up with the Cerax 1000 and loving it but I would also need a lower grit stone (320 or 400). Cerax again or Koromaku or Naniwa?

if after a while, you can't get a burr, just turn the knife around and try the other side on the 1000. see how your edge is on the 1000 and don't go to the 6000 for a few sharpening. if you still can't get a burr, you PROBABLY have too low an angle.

You cant think of anything not great to say about the 1k cerax? How about... it has to be soaked for at least 10 minutes before use. Its soft and friable and creates a lot of mud in use. Wikk make a big mess and will require finesse to get a final edge with all that grit bouncing around. good for kasumi tho. How about the fact the finish looks more like a 500 for naniwa or shaton. But even tho it's a soaker it cuts weaker than 500 glass. I like the stone and it has it's uses but there is no shortage of negative you can say about it, if you actually look

When you show the edge at the end of this video, I can't help but notice how big (tall?) the bevel is. I know you're not into angles, but it seems to me that a primary bevel that tall is only going to happen if you are sharpening at a very acute angle (10 degrees or less?). You've said in other videos to sharpen at the existing angle... is it possible on this knife you decided to make it more acute than it came from the factory? Or have you ever played with microbevels? Thanks!

Yeah. It may start to struggle on knives over the 62 Rockwell range though particularly if it's high in carbides. It will handle steel in the 60ish range just fine though
