The Central California is really an undertold story of settlement in the US. The food is some of the last remnants of that culture but Santa Maria tri tip is definitely an important part of that history along with the California Black Oak wood. Same can be said about the remaining basque restaurants up and down Central California. Stories that need to be told from Santa Barbara to Santa Cruz and the whole Valley too. Great Video.

Great video, glad to see Jockos put on the map. There are few local areas from SLO to Santa Maria that were missed i.e. OLD SLO BBQ, Ribline in Grover Beach, McClintocks in Shell Beach & Arroyo Grande, Hitching Post in Casmalia, Santa Maria Elks Lodge (Cook Your Own) just to name a few. BBQ tri tip is an 805 common cut of beef. I suggest you try the Baja cut from Spencer's Market. On a good weekend with football on; you can smell BBQ pits going from Santa Barbara to Paso Robles. I miss it being in LV, but I go home quite often to stock up on my red oak....

Cold Springs Tavern - The building used to be the Ojai Valley jail. After that, Ojai built TWO brick jails, most people only know the 1 at Libby Park. The railroad changed everything, which is why the brick jails & not a log cabin jail. The 2nd brick is at Avenida De La Verada.

Those grills are called, "Santa Maria" style grills. They are what California BBQ is all about. History: The old Mexican rancheros and Gringo Cowboys created their own thing. Basically, California BBQ. It's meat, grilled on a Santa Maria style grill served with bread loaves and basic pico de gallo salsa and beans. THAT'S IT! THAT'S ALL! That's California BBQ. You were very close to "Santa Maria" the city itself. Why didn't you head out there?! You could get the real deal! In Santa Maria there is a truck that does Filipino style Santa Maria BBQ. Interesting. Delicious. Every time in in Santa Maria, I gotta try a new place. But, the true trick to the Santa Maria style grilling is lowering the meat down into the flames with the chain and leaving it to smoke. It's not there for decoration ya know. Well, Santa Maria style BBQ is truly one of my favorite styles especially due to the history of it all. IT's like one of the first fusion foods in Cali. Gringo and Mexican combined forces and created this great thing!

Mark, you hit some good commercial spots,but the real deal is in santa maria,where locals have been home cooking tri tip for generations! If you ever want to do a backyard tour in santa maria let me know and i will gladly hook you up with as many backyard bbqs as you want to film! Thats where tri tip comes alive! Native santa marians mostly all own at least one bbq pit, and cook tri tip regularly! Try santa maria hospitality sometime,you wont regret it! PS: the grill is called a Santa Maria grill. It originally started in Santa Maria, CA. The history in the tri tip is pretty interesting, the vaqueros started cooking it over open fire, in Santa Maria and surrounding areas-in California

Actually no they didn't, the original Meat was Top block back in the day. There was a local butcher who started using the tri tip cut much later, I believe in the 50s. But you are correct about it beign from Santa Maria.

Mark, I wish you would have traveled up north a little further to Santa Maria, CA. This little town is where Tri-Tip got its start. They call it Santa Maria Steak there in many BBQ places. You need to go to New Orleans, Yuka. Get some Po Boys or Muffaletta. There are a lot of great sandwich places all over the US. Subway is just a chain place. It doesn't even compare to the originals stuff.

I'm from Oxnard and my family lives near Santa Maria where Tri Tip is from.Tri tip grew my mustache.My Dad used to take me to Jackos all the time.Thanks for sharing this

Mark I’m glad you made it to Jocko’s, I live in Reno, NV and my family and I make the 6hr drive just for the Spencer. The Splash Cafe in Pismo is great if you like clam chowder. Love watching your videos happy holidays.

Mark less to say that there are no words that can describe how much joy you put into my family , my friends an myself included . It doesn’t matter what the content in the video is about we all know it’s food but you really know how to embrace the best out of any given food chosen an it’s makers (chefs/cooks) . This coming up weekend my friends an I chosen to go steak 🥩 hunting with the extras all thank to your amazing food 🥘 travel 🧳 videos 🎥 you’re such an inspiration an a great human being with the best hobby ever .
