I brought Anthony's book 'Kitchen Confidential' from a charity shop for i think about 50p. And boy what a read. Hadn't heard of him until read that book but boy did that book put him on my radar. A fantastic read that takes the reader into the underbelly of the behind the restaurant scene. Just wow, what a read. Dude was awesome.

Thank you so much Mark. I absolutely loved Bourdain. I met him in 2011 in Brighton UK. He was doing a book reading tour. I had front row seats and was sat 5 feet from him. I'm so glad I got to take pics with him and have a chat. Miss that guy tremendously.

I've been a fan of your channel since you were 2 years in. I've watched you grow into the YT personality you are. Starting from an awkward young man and transforming to the seasoned and humble pro you are now. Separately, Anthony Bourdain is a personal Rock Star type hero of mine. Mark, I love your shows. I have been watching for a few years now. FYI, when you're eating clams on the half shell, that means you're eating fresh shucked raw clams that have been opened and served with the top half shell removed. Hence the term "eating clams on the half shell!" I live off a tributary of the Chesapeake Bay. I have enjoyed seafood all of my life. Every summer as a young child the whole family would vacation in Ocean City, Maryland. One day we would go claming. We tie a string to a bushel basket that was put in an inner tube from a car tire and tie to our belt loop. We had special claming rakes and would clam in the bayside of Ocean City, Maryland. I love eating clams. I ate some, like 5 days ago. I enjoy them both raw and steamed. The most I ever ate at one time was 76 steamed clams!!!!!!

anthony was never sarcastic or demeaning. he loved what he did -- exposing true food pioneers to his viewing public in the process commenting on the disappearing culture he discovered while he looked for things important -- fading away or being pushed away through other forces. he's a cultural hero and icon. BTW, the atlantic city denoument was masterfully captured in the 1980 film by louis malle staring susan sarandon and burt lancaster.

bison is really lean meat so it has to be precision cooked to be good. the juices leaking out of this steak like a fountain sold me how well cooked this steak is. surprisingly a lot of fat on that cut of steak too. amazing video. thank you for sharing.

Mark I love this idea! Bourdain is legend and I definitely saw all his episodes. I also look at you as a food/culture/travel/people ambassador and it's great that you're giving respect to him. I'm from Jersey, and this episode especially hits... smiles throughout the whole episodes. Yes we are proud and we have our own culture. Not many people know about New Jersey (they mostly know the stereotypical stuff) but I'm glad you are showing the good side. Can't wait to see the next episodes in this series. Just FYI, I started my YT food review channel (quit my my to go all in), and although there were many (including Bourdain) you were my primary inspiration. One day I wish to meet with you and have a nice meal with you lol. That would be so sick. Just wanted to share this with you because I am one of those that have literally turned my life around to pursue my passion. I used to watch Bourdain all the time and it's a shame he's no longer around but then I discovered your channel and instantly resonated with you and your style and your genuinity. With Jesus in my heart, steering my life from now on, I know I can make this work and succeed at it just as you did.
