Actors work with the words that others have written, and they take the time to dig deep into what they are saying and why. That makes them believable in the part. None of that is present when an actor is being interviewed. They use their own words and their own intellect and respond to the questions asked in the moment. While they may develop ways to shift conversations away from what they don't want to reveal, it is basically just one human being talking to another human being. There is nothing to hide behind.
