In Butajira, I go to have the famous Ethiopian minced raw meat, a Gurage specialty called kitfo. This meal is absolutely delicious. A couple of days later, I ride from Butajira to Hossana, a very interesting ride across the diverse Southern Nations of Ethiopia.

Raw meat in Ethiopia is OK. Because it is consumed fresh. Meat is eaten raw only in the same day the cattle are slaughtered.

​@yamantakagod what you dont know is from Mauritania to ethiopia all nomads eat raw meat especially nomads dry age them to preserve why when you cook you lose all the nutrients its risky eating raw meat ofcourse higher chance of getting worm or bad bacteria but when you have healthy animals and your butcher knows what he is doing and the consumer that is ok the gain outweighs the risk.

My home town and Kitfo my favorites, the town looks exactly same since I left. Thank you Kino showing me the things I missed. Glad you are visiting Ethiopia. After Kitfo either drink coffee, lemon infused hot tea, areke to digest it. Avocado will only slow down the digestion since it's a meal on its own. Kitfo is made with kibe ( butter), mitmita (contains dried chili peppers, korarima seeds (Ethiopian cardamom), cumin seeds, green cardamom, black pepper, allspice, dried ginger, dried garlic, cloves, cinnamon and coarse salt.), korerima (black cardamom) and chew (salt).

Youre an amazing adventurer, I admire your courage to try new traditions. that delicacy you had, Kitfo, may be served raw, slightly heated or half cooked and even when served raw Kitfo is different from raw meat as it is prepared by thoroghly mixing it with butter and other special spices that give it its unique test. there are several ethiopians who love kitfo while never trying raw meat.

ኢትዮጵያ 🌻🌻🌻 Ethiopia If you visit one of Ethiopia’s kitfo houses, you will notice that the restaurant offers just one dish on the menu: kitfo, finely ground, raw beef, mixed with butter and marinated in a spicy chili blend (mitmita). The beef is almost always grass-fed, as grain-fed beef can lend itself to a different texture and flavor. The result is a meaty mixture so smooth and tender that it melts in your mouth. Kitfo is typically served with collard greens (gomen) and Ethiopian cheese (ayib) as well as some form of bread, either a traditional flatbread (injera) or a bread (Kocho) made from the banana-like enset plant.

Bonjour, conseil sanitaire, ayant voyagé un minimum et notamment au Maroc (pays d'Afrique), je te signale qu'il ne faut pas faire confiance à tout le monde, essayes de manger avec une personne locale du pays ou de chercher les restaurants dans le guide du routard... car parfois la viande n'est pas celle qu'on croit. Il y a des tricheurs comme en France , au Maroc ect il arrive de retrouver de la viande d'âne, de chien .... alors imagines crue (gros risque même cuit). Bonne route frere avanturier
