I'm 73 and have always had a pantry. When I got married I moved to Texarkana and started a garden. I always had 3 yrs worth of everything. Now I live in Arizona I'm still canning a have been teaching my children and daughter in law to can .All of you young ladies have been teaching me to can meats I wish I done it years ago. So I thank you so much for teaching a old dog new tricks.

Definitely enjoy “kitchen days” in the summer! I think new gardeners would really benefit from ideas about preserving the harvest. Maybe even your next book topic! (hint!) Learning to preserve, not only the raw ingredients, but ready made meals with your harvest is part of it. Gardening is a lot of work and there is no better motivation than cracking open a jar of homemade goodness in the dark of winter and realizing how the work was definitely worth it.

You’ve said it in the past that it’s important to have a plan for preserving what you grow and that has really stuck with me! Before I even get my garden planted I make a list of things I want to can, dehydrate and freeze. This helps with planning what to plant but also when I’m harvesting dozens of tomatoes and feel overwhelmed with what to do with them. I pick a canning recipe that lines up with the amount of tomatoes I have and I get to work! Have a plan and gather your supplies now so when you are in the thick of harvest your kitchen days run smooth!

My best friend is one of 6 children. Her dad lost his job when she was a teen and was out of work for 6 mts. They lived on the food they'd put up through that whole time, a move across country and for a couple mts after he got a new job and as they got back on their feet. Preserving, buying extra, putting food by for the rainy days is ALWAYS a good idea/practice! ETA: Jess, you look lovely with your hair up!

Not just all the freezer meals she does but how she just crams stuff into her garden beds and gets great results. Something I'll trying to do more cuz of small area that gets full sun. Also love Miss Laurie and Mr Brown over at Whipporwill Holler. I got quite a bit of snow peas this year for eating fresh and freezing some. A favorite of mine. I'll plant some more if I can find room for the fall harvest. Blessings.

I'm pushing 74 and I remember being YELLED AT when I little to not go by the stove and to stay out of the kitchen as the pressure cooker was going. I was told it could explode and kill me. Needless to say, many years later, If I had to can anything it was water bath canned which was "limiting" to say the least. A few years ago, my husband bought me a pressure canner. I totally REGRET not getting one sooner. Glad I overcame my fears!!

My mom once got severe burns from a pressure canner full of green beans - I think she removed the lid while it was still under pressure. I was afraid of them for years. While I don't pressure can, my new best friend is an instant pot. And I traded in the water bath kettle for a lightweight steam canner, which is my second-best friend.

Saw Taylor at the Newberry Farmers Market today and bought a bug spray. Left there and went to pick blueberries in Chapin. No bug bites, it works great! First time I have run into anyone with a Roots and Refuge shirt on ever and she is on the video! We had just taken a picture in our shirts when Jess walked up! Fan girl minute for sure!

I’ve gardened for years, and always struggled to keep up with my harvest and not let things go bad. I tried canning about 10 years ago in the thick of harvest and it was way too overwhelming to learn it all while drowning in the garden. I never did it again because my memory of it was so overwhelming. This year I decided it was the year to master canning. Because of my growing area, I’ve just gotten past the big early season push and I’m now in a more waiting and maintenance part of the season, so I decided to buy a bunch of produce as I find good deals, and canning all that. My mom and I bought a pressure canner together and I’ve been using all the chicken carcasses in my freezer and making broth and pressure canning. I’m going to can up a bunch of the deer meat in my freezer to make room for more freezer stuff too. I’ve done crushed tomatoes, pasta sauce, tomato juice, applesauce, and strawberry jam. I’m loving it!

Jess when I take my jars out of the canner, I fold up a towel and as I pick up each jar I support the bottom with the towel. Just an extra safety step should you have an equipment failure. Like a slip or a tong that goes wonky. A dropped hot jar can cause a very serious injury.❤️

I love this one!! Ready made stew, that’s homegrown and homemade, Awesome. I’ve never used a pressure canner and I don’t have a freeze drier. I freeze what I can and give away the rest. I’m on an acre+, have a smallish garden but when the harvest starts coming 🤯 I need to learn how to preserve. I would appreciate these videos too. I would love dinner recipes I don’t know many from scratch recipes I didn’t really have anyone in my life that taught me those things so learning what I can whenever I can is the name of the game and your channel has already helped me so very much I am yearning to grow things I live on a 5-way intersection And only have one window I don’t even have a drive way I do have a green thumb tho and am striving to one day have my very own place with my very own garden! thank you so much you have really helped me through the extremely tough days when I cry because I don’t have those things yet some days it seems so far out of reach and you remind me it is attainable and I will get there. I'm pressure canning for the first time this year. Beyond what you listed I'm doing bone broth (when whole chicken on sale), pickled cabbage, plain cabbage, caramelized and pickled onions, relish, purees of squashes, jellies, cukes.

Kitchen days are what I enjoy as well as gardening and finding all the new growth popping up everywhere. We got a late start to our garden this year here in South Central IL. because of all the rain and now we are dry. (wouldn't ya know..lol) We are drip irrigating to keep things going . My contender bush beans have exploded with blooms. Cannot wait to have fresh green beans from the garden and yes, another week and I will be pressure canning them. My tomatoes are blooming and that sacred first tomato from the garden is my favorite. I love watching your kitchen days b/c I get new ideas. I love to watch your cheese making also. We are in preserving mode here and will have pigs ready this fall. We just had a locker kill and chill two steers so we are ready to start cutting them up and wrapping for the freezer this week. Lots going on, but the feeling of having healthy food put up is a great feeling to have. Keep inspiring us! We love it.

I needed to hear this today. I am so discouraged with gardening at the moment. We have a fence up and have used this garden for going on 9 years. Last year we had something getting into the garden. This year it is worse. We set up a cam camera - groundhog, squirrel, rabbit, hawk, and deer. It looks like we need a taller fence. They have made a meal out of my strawberry leaves. My peppers and beans are chewed up. My goal this year was to can more. So I guess it will be store bought stuff. My tomatoes look good so far and we have potatoes, and cucumbers. I did plant radishes and okra so we will see. I am interested in prepping, storing stuff, canning (only have done it a little), fermenting, etc. I have started drying some of my herbs. My first year to start rosemary and dill by seeds.

Last week I went shopping a lot if empty shelf were in the supermarket. So looks like not just the USA but other countries have the same problem like us in Oz. I dearly love to learn how to preserve flour. I remember when I was a child back in Hungary flour after a while had little white creatures like worms. I don't use much flour but still love to have more at home just incase.

Tomato paste adds an awesome rich flavor to beef stew. I've canned chicken, pork, Apple pie filling, salsa Verde( with green tomatoes), beef stew and lots of tomato sauce, turkey and chicken stock. I canned for the first time last year. I really enjoy growing and preserving my own homegrown foods. I wish I had grown my own meats but, I'm in a village setting. I'm addicted to gardening. I enjoy being outside with the bees buzzing and the birds singing their songs, it gives me a sense of peace.

Love this video, Jess! I have watched you since you started and I’ve enjoyed every single bit you have shared! I have gardened for two decades. I am a former ER nurse and am now a cath lab nurse and I garden to keep my sanity…lol….your videos have been a constant for me for inspiration, education, or confirmation of what I’m doing…lol….keep them coming! Side note, in our household, you are known as Aunt Jess ☺️

I love kitchen videos… I have to admit I am terribly terrified of pressure canning when it comes to the weights and the water levels… Makes me nervous I would love an ABC class from you please and thank you. I love Becky at acre Homestead! And now that she’s moving into a newer house with a giant kitchen her freezer meal videos are going to get crazy lol thanks for mentioning her on your channel she’s a sweetheart U2 need to collaborate lol ♥️

I am loving kitchen days on Roots and Refuge farm. Kitchen days at my house makes me feel complete. I grew it, picked it, and prepared it. All I have to do next is eats it. 😊

I love kitchen days especially when my daughters and grandchildren come to help. We are several weeks away from a big processing day other than peas and my grandson is eating them as fast as they ripen. Can't wait for tomato season!

I'm from prosperity right up the road. I'll be starting my homestead in the fall. Currently traveling trying to find the right spot. If it wasn't for the intense heat (medical condition) I'd be where you are. I feel so blessed that you made it out that way, the community needs you and I'm positive you'll do amazing! Definitely love to visit y'all sometime in the cooler months. All my family still lives out there and once your store gets up and running I'll send them all y'all's way!:)

I am in my classroom, tho I have recently upgraded - from a small suburban established garden where I homesteaded every living inch of soil (and a massive container garden on the large patio!) - to a large suburban grass plot where I am installing new beds and newly planting potatoes right alongside you!

I not only learned a lot but enjoyed your rant. I know our father allows situations to be set up so that we not only can learn but teach others this is what you have been wanting to do well here's a perfect example you taught me about herbicide issues I have had problems with soil all year this year because I've never used soil in pots this is the first year I've always done in ground actually thank you so much for allowing yourself our processor gain this knowledge so that you could pass it on I know that it is a slug in the gut to have to be that kind of person but always remember God has a purpose for doing and allowing everything that happens in our life and all we have to do is just be patient and watch and learn and t e a c h. You are my hero I have learned so much from you over these years that I have been watching you. Thank you and God's blessings on how you're approaching this situation.

Jess you are such a blessing to those of us who have met you via this medium. Becky really does have some good ideas about pre cooking days. I changed jobs in January, and knowing that I was moving into a high stress/low home effort season, I cooked casseroles over Christmas break. I challenged myself to one casserole per day over the two weeks I had off in between jobs. When I started my new job, I had enough meals in the freezer to eat dinner (I'm a single woman living alone) every night (with a few Sunday dinner leftovers from cooking for the family) until the end of the school year. Once I finally recover from the stress of the end of the school year, I'm going to start canning ham and bean soup, and beef stew, and chili, so that I can just come home and open a jar after work and eat a healthy meal. That's MY goal for July. I've also got the garden fairly well started, and I'm waiting on produce to magically arrive in my kitchen. Then the real canning and preserving begins. I've been heading out to the local orchards over the last several weeks to get fruit. I mixed enough cherry pie filling for 6 pies, and have enough cherries frozen to make preserves when it isn't heat advisory season. Today we went out to get raspberries, and I only was able to get one quart. The people ahead of us picked the bushes clean of everything ripe. I'll go out again mid week, and hopefully get enough to make raspberry jam. Blueberries are ripening - but not yet ready. I do cook everything from scratch - I have for years after some health issues - and routinely buy ahead when grocery shopping. I may not have a years supply in my pantry, but I could probably feed my family for a few weeks on what is typically here. My goal is to preserve what is in my garden this year so that I don't have to go grocery shopping except for perishables (milk, eggs, butter, cheese) during the school year. I live on a city lot, so no farm animals. However, I found a fairly local rancher from whom to buy pasture raised and finished beef and pork. It seems to be making a difference in the lives of my sons who have autism. The goal for tomorrow is to finish planting my seedlings, go sit with a friend who is struggling with some issues with her ex-husband, and prepare for Sunday dinner. My burning question is this: Why sourdough instead of regular homemade bread? If you have a potato in the house, you don't need starter or yeast - just boil and cool the potato, and add it to the flour mixture. There's enough yeast on/in one potato to make bread rise (or at least that was my great grandmother's philosophy).

here are the cooking videos i NEED in my life: I always wonder how you do all the work you do, garden, your new business, the animals, the kids, milk the cows twice a day AND get a homemade meal on the table for your family. I know you mentioned once that Miah cooks too, but what are the recipes and meal ideas and throw togethers that you make on the regular? You need a summer kitchen! It's something southern women know all about. It's a screened in outdoor kitchen for processing home canning, dehydrating, and now freeze drying. It keeps your house cooler by cooking in an outdoor kitchen.

2 of my favorite "types" of your videos are devotional ones and the rare "this is what we are having for dinner" where you open and use some of your homegrown, home canned items and make a meal. I would love to see more of those! (And I love Becky's kitchen days too! Wish I would have done all of this when my kids were still at home, but they benefit now when they come home and I send them off with my treasures!)

Canning! I am SO incredibly nervous about canning incorrectly and not killing off the bacteria. A detailed video addressing that would be so great! Also curing and storing onions/garlic/etc - how long do they last and how to make them last longer. You have turned me into a pretty competent gardener but I am giving a lot of produce away because I am so overwhelmed at all that I still need to learn about the next steps :D.
