I remember my mom using corned beef with diced potatoes instead of the ground meat. As I got older I would drown the crunchy rice and potatoes with hot sauce. So delicious.

I'm watching this now with my Maltese girlfriend and her mother always put fried aubergine in and at the end added ricotta. Looks good and I'm gonna make this too but with ricotta.

Raw rice absorbs a lot of liquid. Either pr-cook the ice or else add water before baking.

Just like mum used to make it but needs double amount of water so it’s not so dry !

Nice. I think the origins are definitely Italian! It's a simplified version of different South Italian rice timballi, such as Sartu di riso from Naples or much likelier Sformato di Riso Siciliano. Huge festive party rice casseroles for a crowd. However these dishes probably have a much earlier Medieval Arabic influence so you are not off your mark.

It is a Maltese dish, Maltese food is mainly influenced from Sicilly but definitely does not have any arabic influence ecxept from the pastries.
