Really great take for a foreigner. Now, if you wanna go really traditional you could use game meat(boar bacon, venison, maybe a bison). Fresh mushrooms make sense for hunters since they would be in a forest. Spices wise juniper berries, marjoram and caraway. Also our prunes are usually smoked.

Hey thanks for the recipe! Just wondering, would chicken breast work on ragu as well? Also, was the lighter flavor better than the heavier one on this dish ?

Chicken breast has much less fat, so you'd probably want to supplement it in some way or it wouldn't have the right texture. Also chicken breast tends to get dry and stringy when slow-cooked. I think the heaviness is a personal preference, but ragù typically has a robust flavor, so it's a different vibe altogether.

You can, but I'd go easy on the seasoning later on. Or you could try rinsing it after salting, but that may undo most of your work.

Look up the "polpettone alla genovese". It's an oven dish with runner beans, potatoes, and held together with eggs and cheese (and topped with bread crumbs). Very tasty and healthy, I plan on making it for my daughter once she's old enough!

The secret is use burn the seeds of the chiles to create a darker tone. Also add in chocolate before not after you have cooked your mole for an hour or two. You can use Ibarra Mexican chocolate instead of a chocolate bar. In the united states they have mexican chocolate
