Machanka is a simple Belarusian stew of pork ribs and sausage. This version uses beer for a bit of brightness and acidity, as well as a roux of flour for thickness. Served alongside it are yeasted pancakes, called blinami, that counterbalance the rich broth with a bit of fermented funkiness.

40g Butter

4500ml Milk

2 Eggs
