【Ingredients】(Serves 1 to 2)
1 chicken breast
2 spring onions
1 bunch garland chrysanthemum
3 dried plums
5~10 shiso leaves
5g dried bonito flakes
1 bag of udon noodles, boiled
6 cups Japanese soup stock (1200cc)
1 tablespoon sake
1 tsp salt
1/2 teaspoon soy sauce
Recipe
1. Cut the white part of leek diagonally. Cut garland chrysanthemum into chunks.
Peel the skin off the chicken meat and cut into thin strips of about 5~7mm.
Make the condiments. Finely chop the shiso leaves. Remove the seeds from the dried plums. Add the dried bonito flakes and pound with a knife to make a fine mixture.
Make the soup. Add sake, salt, and soy sauce to Japanese soup stock and bring to a boil.
