Dispensers are made with a bow because when they were out, there was no crossbows and players adopted the recipe with a bow so changing it would just be confusing. Mojang trys to not to change recipies a lot when they are fully out because old version old recipie, new version new recipie. 2 things to remember instead of 1.

The reason why water cauldrons make you die when you fall inside is because you slam the metal with your legs, your legs break. It honestly makes sense for cauldrons to do that, but not the pixel of water.

The sculker one is because of how a zombie would move vs a human. In media, zombies take slow, heavy steps, while people walk with much lighter steps. So it would make sense that a zombie stomping around would be louder than a player strolling casually.
