The chicken kept "vanishing" is because it is for some reason part of the hostile mobcap, so it will (just like other hostile mobs) start to despawn randomly if you are 32 blocks away. It despawns because it is considered as the same mob as the zombie, and this is so that there will be no random chickens in a cave. Hope this helps!

*24 blocks away. Mobs spawn 24 blocks away from you, and 128 blocks from you. If they go 128 blocks away, then they will definitely despawn. They despawn randomly when between the 24-128 blocks radiuses though.

It has to do with lag management iirc. When zombie chicken jockeys were first added, they were laying eggs like crazy, zombies were picking them up, meaning tons of zombies would randomly group up in caves and wouldn't despawn because they held eggs.

1) zombie chickens cannot be bred. 2) wandering villagers can spawn within a 48-block radius from player in any biome, but cannot spawn if another wandering trader is in loaded chunks (such as spawn) or if the gamerule, doTraderSpawning is set to false. They take, on average 14 1/3 days to spawn at roughly a 7% chance of spawning one every 24000 ticks (AFTER the first two attempted spawn attempts fail, with a 2.5% and 5% chance of success likely failing. 3) when capturing a pair of zombie villagers, separate them by a single column of blocks so only one splash potion and two apples are required to convert them both. Also, always make your first villager a farmer. every other villager after him can be assigned any profession you want, but the first villager is always a farmer. 3.5) Use first two villagers to create a villager breeder iron farm combo. These aren't hard. If you've been to the nether, collect some of the lave to use as a killing mechanism for your iron golems. Profit. 4) silk touch the crimson nyleum and warped versions of the netherrack and bring their respective mushrooms home with you to farm for wood in the overworld. 5) passive mob spawns (zombie chickens don't count) that are trapped in a fenced area smaller than 20x20 will not despawn naturally unless some command or mod is causing the behaviour. 6) passive mobs require grass block to spawn. Which, in a single biome ocean world, I believe is only obtainable in new 1.18.1+ caves, though is technically possible to get a small island with grass blocks instead of sand .

No such thing as zombie chickens it's a chicken jockey and when you kill the baby zombie they can be bred afterwards atleast in bedrock you can and the 1st villager doesn't have to be a farmer if you have access to carrots, potatoes, wheat, and beat root you can give any villager an excess amount of vegetables and bread and they'll pass them along to other villagers and breed as long as there's beds to fit more villagers like if you have 2 librarians and make 10 beds you give them enough food and they'll reproduce until the 10 beds are full. I've made dozens of villager trading farms and it works for me every time doesn't matter what job the 1st villager has if you have access to all vegetables and wheat.

Kolanii this is entirely too late, however if you go into the Video Settings > Shaders you can turn the underwater fog off, or in some shaders just set the fog to start 128 blocks away. You can also do the same with fog out of the water too : )
