Ingredients:
For Misal:
1 cup moth beans (matki)
1/4 cup mixed sprouts (moong, moth, black chana)
1 onion, finely chopped
1 tomato, finely chopped
2-3 green chilies, finely chopped
2-3 cloves of garlic, minced
1/2 inch ginger, grated
1/2 teaspoon turmeric powder
1 tablespoon Kolhapuri masala powder
1 tablespoon oil
Salt to taste
Water as needed
For Tempering:
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
A pinch of asafoetida (hing)
Few curry leaves
2-3 dried red chilies
For Garnish:
Finely chopped coriander leaves
Fine sev (fried gram flour noodles)
Chopped onions
Lemon wedges
For Pav (Bread):
Pav (bread rolls)
Butter for toasting
Instructions:
Preparing the Beans:
Soak the moth beans overnight or for at least 6-8 hours. Then, pressure cook them until soft. Drain the water and keep aside.
Making the Misal:
Heat oil in a pan, add chopped onions, garlic, and ginger. Sauté until onions turn translucent.
Add chopped tomatoes and green chilies. Cook until tomatoes turn soft.
Add turmeric powder, Kolhapuri masala powder, and salt. Mix well.
Add the cooked moth beans and sprouts. Mix everything together.
Add water as needed to adjust the consistency. Bring it to a boil, then simmer for 5-7 minutes.
Tempering:
Heat oil in a small pan. Add mustard seeds and let them splutter.
Add cumin seeds, asafoetida, dried red chilies, and curry leaves. Sauté for a few seconds.
Pour this tempering over the prepared misal.
Assembling:
Toast the pav (bread rolls) with butter on a griddle until golden brown.
Serve the misal hot in a bowl. Garnish with chopped onions, coriander leaves, fine sev, and lemon wedges.
Serve hot with toasted pav.
