How long does the sauce stay fresh in the fridge? i.e. does it go bad quickly?

Pretty long! The vinegar and salt in the soy sauce both act as a preservative. I've used it months later with no issues. I've noticed it can start to smell "cheesy" after a few weeks, but it adds another layer of flavor. Nothing off putting or gross tasting. Enjoy

A part can be whatever you’d like! Just so long you keep it consistent. 1 part can be 1 cup, 1/2 cup, 1 gallon, etc. the ratios are the only thing that matters! Enjoy
