Finally someone else that likes white meat more and knows that it isn’t always dry! I get so annoyed, when home cooks (and even some chefs) say that chicken breast is a dry piece of meat, you‘ve GOT to marinate it and dark meat is always better... Chicken breast is only dry, if it’s over cooked! When you fry it just right, it’s really succulent.

Chicken places are lot different in Korea compare to the States. In America, people have fried chicken for lunch or dinner as a meal but in Korea most of the stores are catered to drinkers so every chicken store sells beer or soju. Also many stores don't open till 5 or 6pm because fried chickens are primary thought as a side dishes to beer rather than a meal.

Question and advice. Q. How do you get all the information about these restaurants? A. There are many Korean chicken franchise (BBQ, BHC, Mexicana, 처갓집 네네, 굽네, 깐부, 또봉이 etc), and I believe they represent the real Korean style chicken. They are loved by people and always on the first seat when a family have to order something past 9 pm. Each franchise has distinctive charm. One may boast its fantastic seasoning, another may be renowned for mild taste, the other may be loved for its magical powdered-flavored-batter. So maybe next time you visit Korea, you may wanna try Franchise ones too. Because it's like a common sense between Korean people to have basic knowledge of each chicken Franchise's charm.

@Jada The guy wasn't a slave and Sanders wasn't a slave-owner as such. KFC (Kentucky Fried Chicken) is from the mid-1900s, and slavery was illegal after the Civil War in the mid-1800s. Sanders wasn't even born until 1890, well after the war was over but well into the age of institutional racism. Here's a bio. www.eater.com/2016/6/24/12004712/kfc-colonel-sanders-jim-gaffigan They don't mention him getting his first recipe from a black co-worker, which is what I read somewhere that I can't find now, but to be honest, it's not the recipe. Southern fried chicken has a pretty standard recipe, but it's the technology used to prepare it that makes it come out like it does. Southern fried chicken is (preferably) brined, breaded, dipped in buttermilk, breaded again with crispier crumbs, then fried in a cast-iron fry pan in deep oil, turned over twice to cook it evenly, and it takes a half-hour to cook. Sanders couldn't make enough of it doing it that way. He needed a shortcut, and someone was trying to sell him a pressure-cooker and he got an idea to try making chicken with one. Pressure fryers and pressure cookers don't quite work the same way. The pressure-fryer system of cooking chicken was something that Sanders really had to experiment with for several years before he had it "perfect" and then he went out and franchised that, leasing the fryers, the recipe, and all the other parts of the business to other people. He was like Ray Croc with McDonalds only less of a parasite on the original owners of the name.

Hey Mike, you gotta go to Canaan Duck in Ilsan. It's very close to Seoul but it has the best duck ever. It's unlike other korean duck places where you grill smoked duck, they give you fresh duck and you grill it on a charcoal grill. It's amazing!
