What a tool. I'm Italian myself and although it may not be the traditional recipe, I most definitely get the need for something fresher, saltier or more acidic to keep things balanced. It's like south French street pizza with all those salty black olives, or egg baguettes in SE Asia with that celery-like veggie they use: sure it looks weird at first but once you taste it, you just know it makes sense.

I've been trying to tell people about Detroit style for years since I live here, Thanks for putting this up. One thing to keep in mind about any of the pizza dough in the US is we take great efforts to develop a good flavor in it, its not just for holding the toppings.

Not all pizzas are that greasy. Certainly every place I've tried in Chicago had Super-greasy pizza. A few places here in New York have greasy pizza, but never as bad as Chicago. I'm not familiar with Detroit pizza, so I can't comment on that.

Well I mean you've got your veggie in the form of tomato sauce. You've got your grains in the form of dough. You have your dairy in the form of cheese. Depending on the toppings you will also have your meats and more veggies. So yeah a pizza diet is actually possible. Then again, pizza dough is made out of flour so you would still be missing your grains, plus all the salt and carbs. Yeah...pizza diet doesn't sound like a good idea.

The deep dish pizza in Chicago is more of a tourist pizza. It is poplar in but the most popular is the tavern style pizza. It is the best I've ever had. I do like Detroit style when it is a little bit overcooked (you can order it that way), and NY style is always great as well.

Y'know, I never really considered the why, but the salty greasiness of New York style really is why it pairs so well with beer. Thanks, ladies. I just love the apocryphal origins of Detroit style pizza. The version I've heard most consistently revolves around autoworkers using industrial pans as pizza pans. And, honestly, I can believe that factory workers have done that. Even as recently as a few months ago, we've tried using ovens at work to keep subs hot for break. (Not a bad idea on paper, but the bread texture ends up a bit off, and the flavors aren't far behind. Might work for an hour or two, not for half a shift.)

I can see how pickles and kimchi would make sense for a Korean pizza. It's the same concept if I was to put banana peppers on the pizza. They are mainly using pickles or kimchi for the vinegar content of those foods to break up or cut the oil/grease/fat from the pizza.

As a new yorker, there is no such thing as new york pizza outside of new york. It either has to be singa's or it has to serve something called the grandma while in the city. Outside of the city doesnt even count. I've tried "New york pizza" a multitude of times outside of the city and it's always been cheeks. With all three in mind, Detroit pizza is my second favorite. I know it sounds bogus, but for some reason it also tastes better in new york.

Actually, the pizzerias in my area serve a Northern Italian style pie and you can get pickled hot yellow peppers with it if you ask. Pickled peppers are popular in the Italian communities here.

Not that I don't want you to do both! ^_^ For soul food - a non-exhaustive list would include: grits, mustard or collard greens, fried okra, fried catfish, fried chicken (fried anything really), green beans/ black beans/ black-eyed peas/ white beans cooked with bacon, sweet potato pie, biscuits 'n gravy. And LOTS of pie/cookie variations. Also soul food includes a variant of barbecue - but you already covered that. ^_^

The pickles on pizza thing isn’t so weird when I think about it. In Chicago some people eat pizza with Giardiniera, which is an Italian mix of pickled vegetables (mainly diced peppers and carrots) in oil. There’s mild and hot versions too and you can easily get it at Italian stores and a lot of times at normal grocery stores as well.
