This hearty hand torn noodle soup has soft and chewy noodles in the seafood and vegetable broth. The dough for the noodles is so easy to make and if you want, you can store the dough for 2-3 days in the fridge. This recipe gives you a big pot of comforting hand torn noodle soup for 2-3 people.
📋 Ingredients:
Green onions - 3
Potato - 1.5 cup
Carrot - 1/2 cup
Onion - 1/2 cup
Zucchini - 1/2 cup
Salt - 1 tsp
Minced garlic - 2 tbsp
Korean soup soy sauce (Gukganjang) - 2 tbsp
Korean red chili paste (Gochujang) - 1 tsp (optional)

Noodle Dough:
All-purpose flour - 1 + 3/4 cup (270g)
Salt - 1/2 tsp (2g)
Oil - 1/2 tbsp (7g)
Water - 3/4 cup (170g)

Broth:
Water - 12 cups (2.8L)
Dried kelp (kombu) - 4
Dried anchovy - 10
Dried shrimp - 10
Green onion roots - 3
👩🍳 Instructions:
For hand torn noodles:
1) Combine all-purpose flour, salt, and oil. Slowly add water. We need a wet dough - add more water if needed. Knead the dough until smooth, about 5-10 minutes.
2) Put the dough in a plastic bag and rest it in a fridge for at least 30 minutes. You can store the dough in the fridge for 2-3 days.
3) Take out the dough from the fridge and rest for 30 minutes at room temperature before cooking so it's easier to stretch the dough.

For soup:
1) Remove the black innards of the anchovies. Without oil, pan-fry the anchovies over medium-low heat for 2-3 minutes.
2) Add the anchovies, dried kelp, dried shrimps, and green onion roots to water and cover, and bring it to a boil on medium-high heat. Once it starts boiling, uncover and boil for 15 minutes on medium heat.
3) Remove the foam, kelp, shrimps, green onion roots, and anchovies.
4) Add potato, carrot, onion, salt, minced garlic, Korean soup soy sauce, and Korean red chili paste.
5) Stretch the dough to make it as thin as possible and tear off 2-inch pieces. Cook for 10 minutes on medium heat.
6) Add zucchini and green onions. Cook for 5 minutes until the noodles are cooked.
7) Taste and add more salt, Korean red chili paste, or water if desired.
