As a Japanese I must admit our fried chicken is not that great to be honest. If you go to Japan the best Chicken places are either western or mostly Korean restaurants. We basically copied most of their style and recipes so yea.....

Don't say that! there is a very tasty Japanese fried chicken restaurant in my neighborhood (I'm in US, but this place is run by Japanese people with the original recipe from Japan). The style is quite different from Korean fried chicken, but still very delicious... it tastes simple but elegant. They also have fried chicken skins, which I like the most. As a Korean, I enjoy both fried chickens 😋

I’m Korean But I think, Japanese fried chicken is good tho. Cuz, When I went to Japan for travel, I just ate a bowl of rice served with some chicken toppings. But It was absolutely good to me. In my opinion, Korean or Japanese fried chicken is each has a lot of charms!

Both chickens look great. However As a Japanese I must say, I never seen your karaage recipe in Japan. We normally use bone less chicken thigh or breast. We marinated pre-cut meats with sauces (soy or salt base sauce) and deep fried as you did. Karaage is simple dish and tasty. They are nothing messy, greasy and oily. Japanese mayo is great, but just use lemon juice next time... you don't need over powered dipping sauce. Besides if you are talking tartar sauce... that’s a totally different story.

I think Korean chicken should compare with traditional American Buffalo wings. they are both sticky and junky great. Nagoya-style chicken wings might be similar to his Japanese chicken recipe, but no tacky garnish.

few things: 1. those are legs, not wings (he specified he didn’t like flats implying he prefers drummettes but those are definitely or freakishly large chickens) 2. korean fried chicken is usually soaked in milk to remove the smell, not a traditional salt and sugar brine 3. mirin has alcohol in it 4. gochujang is a very thick paste so idk what he was using (perhaps an americanized sauce version that i’ve commonly seen pop up) 5. japanese fried chicken (karaage) is primarily boneless and bite sized chicken that being said, these look like really tasty americanized version of these! fried chicken is delicious 🤤

Hey, Nick! I'm half Japanese and grew up for the most part in Asia. My favorite cuisine is, whaddya think? ITALIAN! Real Italian, not the slop from Buca di Beppo, Olive Garden, Spaghetti Factory or any of those other hell holes. But I LOVE Korean food, as well as Japanese (of course), Chinese and Vietnamese, Ypur Korean fried chicken looks amazing and I'm sure it is. But if you ever find yourself in Seattle, seek out a Korean fried chicken joint called Bok a Bok. You will be blown away! I've never had any fried chicken that was as crunchy, juicy and flavorful as Bok a Bok's ! And their sides, like kimchi mac and cheese? Don't have the words, man! And with your stature in the culinary world, you can probably get the recipe or figure out how they create such an amazing enhancement to life and maybe share it with us. The restaurant only has 4 locations and 2 are only take out windows rather than restaurants. I lived in Seattle for 22 years but now live in San Diego and miss the hell out of Bok a Bok! EVERY time I visit Seattle, even with so many incredibly delicious places from which to choose, my first stop is always Bok a Bok! And last stop along with a couple of in betweens! Love your Tubes, Toks, and IGs my man and seriously think you got a raw deal on the food network! Thank you for continuing to love what you do and sharing it with us!

You are cooking chicken legs (drumsticks). Wing drums are called drumettes. Hence, drums are wings, but you are not cooking wings.

Those are not wings, those are drumsticks. I see alot of cooks on YT get this wrong. A chicken wing consists of the wingtip, the flat and the drummet (I'm not sure if drummet is the correct english term but its the term used where I'm from). What you used was the drumstick part of the chicken leg, the other part being the thigh. The drummet and the drumstick look similar but the drumstick is bigger and has a tendon going through it. If what you used in the vid were drummets those chickens would be monsters >.< Hope this clears some stuff up

Hey Nick, I would like to make a small correction here. Drumsticks are not wings. They are parts of chicken legs. I think you got it switched up with drumette, which is a part of chicken wing. A chicken wing consists of drumette, flat and tip.

his japanese recipe wasn’t bad but tbh it was not the most accurate. i’m korean not japanese but i indulge in sushi, karaage, japanese curry, katsu, and a variety of other japanese food all the time (like every other day). the karaage that i know and am familiar with is made using boneless chicken (often thighs) and does not have a sauce coating it like korean fried chicken. i also felt that he was unaware that mirin is just cooking sake. some things he did get right though were the potato starch and the marinade was pretty decent. i commend him on those accounts. overall, i love both korean fried chicken and japanese karaage but was slightly disappointed with his recipe.

Now it's been a while since this video has been uploaded(poor me who found nick after all this time), as a Korean I would like to say the way Nick cooked his wings is wrong. What you're actually supposed to use is "Frying, or Fried Chicken Powder" instead of starch. Now in Korea these are very easy to find. However, from experience, it would be like finding a needle in a desert. Instead, you can go to a local Korean Store, such as "H Mart" where I went quite often when I stayed in America. I'm not a 100% sure, but there likely will be a bag labeled "튀김가루". That's the one you want to find. For marinating, no I'm not an expert in cooking, but the method Nick used is never heard of. We do not marinate our chicken in water and sugar, instead, we use minced garlic, pepper, salt, and milk to get rid of the odor. After the chicken is prepared set aside and leave it in the fridge for about 30min to an hour. Then get a bowl and mix the Fried Powder from earlier with water with a 1 to 1 ratio. If you prefer more of a crisper texture, add more powder and the crispy layer will get thicker. If you want your chicken to be a little less crispy, add more water to your mix. If its prepared, grab your chicken, and soak it in all the way. Now just before you start deep-frying, get a plastic bag and fill it up with Frying Powder. Place in all your chicken which you soaked in thoroughly with the mix, squeeze the lid tight with your hands, and start shaking. Make sure there is enough of the powder so your chicken can get real crispy. Finally heat up your oil and start frying. The first time you fry your chicken, get it off the oil just before they start to turn brown. Then leave them out for about 5 min and deep-fry them until they turn gold. Although the sauce Nick showed in the video isn't perfect, it's pretty close enought to our traditional way so I guess that won't be a porblem. Enjoy!
