I made this but instead of beef tenderloin, I used a beef tender chuck because it is 1/10 of the price. I seared and then Sous vide the meat at 130 for 22-ish hours and then seared again and made the recipe like normal and baked at 350 for ten minutes and 425 until brown and it turned out incredible. The meat was super tender which I was initially worried about. I highly recommend this recipe. Very good.

Nick you are the best chef I've ever seen. I used to think gordon ramsey was my idol. He's really a great chef. At 66 years old I'm a home cook that needs lots of help. I know it's not going to be possible but man it would be a dream to be able to cook with you. You have a way of making me want to cook more every time I watch you. I truly believe you could very well be one of the world's best chefs. So young and so talented. I'm retired and on a limited budget but I'm trying to build my kitchen. Wusthof knives, cast iron pans, really good non stick pans and when I get some extra money maybe a mixer, food processor, and blender. That's probably going to take me awhile. Keep it up Nick. You're going to be the all time most popular you tuber ever. That wellington looks so damn good makes me want to run out tomorrow and get all the ingredients. 😍

I didn't know you would use a layer of crepes. I didn't the last time I made a Beef Wellington. Most people don't serve it with a sauce. I did with mine. I made a stock out of chicken feet, pork neck bones, an assortment of dry mushrooms and the usual vegetables. Made that in an instapot. It was very good!
