👩🏻‍🍳 Young radish kimchi (열무김치) is a popular summer kimchi in Korea. It is also my favorite kimchi. The kimchi, all by itself, is very delicious to eat with rice. However, it is also very useful in other dishes such as in bibimbap and noodle dishes once it becomes well fermented. I made this kimchi with our home grown radishes. “Young radish” is the type of radish used, not just any radish that is young in age; the Korean name is “열무.” I used a special method to make kimchi broth for this recipe; however, you can skip that step and just use normal water instead. 열무없으면 유채와 유채꽃도 함께 열무김치담듯이 담으면 열무김치맛이 나요. 전엔 배추보다 청경채로 김치를 담아먹곤했는데 청경채는 배추같이 약하지않아 여름배추대신 청경채로 배추김치담으면 좋아요.

I am happy you are getting a New Baby very soon... I just want to congratulate you and your husband.... your videos are so important to me, since korean coking in my country is pretty scarce. But I do not want to enter a contest or whatever because I can mix my feeling of gratitute + your new arrivbing family member, with the contes.. I made this when I found the young radish leaves at the Korean grocery store. But I halved the recipe, because I only bought that much and I wasn't sure if it would be good. I liked the recipe, thank you! :)

Just finished making two gallons. The young radish grew in the garden like weeds this year. My korean neighbor is coming in the morning to get a load of them. Planted a 20 feet+ row. Got enough seeds to plant a fall crop of young radish. Yeah, I know this is a spring kimchi but it's good in the fall, too! Question, Aeri! Is this the same "radish" that is *the* korean radish? The same radish used to make gak doogi? Some of the plants had lemon-size radishes. I just made sure that were well salted and I threw them into the kimchi mix.

Young radish is.... family of Korean radish..but comepare to the normal Korean radish which the radish part is big (huge) and eat that one itself for different food.. young radish.. the white radish part from the ground is very small (tiny)... and we eat the whole thing with the green leafy part as Kimchi ..shown in this video.. If your young radish had lemons size radishes, you can make gakdoogi with too..or.. cut them into smaller pieces and add to your young radish kimchi. It's great you can harvest Korean plants from your garden..I bet your Korean neighbor is happy to have them.. hehe

can you make hotbaah (핫바) does things you can get at subway stations that tastes sausage like, its very yummy and I miss it so much ! plus my american friends are missing it as well cuz they tryed it when we visited korea lol xP

No, you don't use soy sauce for kimchi. You can use salt instead. Thanks

Thank you so much for this recipe. I went to the Korean supermarket yesterday and they had beautiful yeolmu so I'm all set to make the yeolmu kimchi. I looked at a lot of recipes for this and I like yours because you use myeolchi-dashima-pyogo yuksu which I think will add some great flavor. Taedanhi gomapshimnida!
