The vast majority of people in the world aren't even aware of how much depth and variety within the cuisine of their own country there actually is (you see evidence of this all the time when people argue that they don't eat things a certain way "here", not knowing that other people/regions of their country do). Many chefs explore food their entire careers and nevertheless have vast swathes left over, unexplored. You can go ever deeper in one cuisine, so when it comes to a question of depth vs. breadth, sometimes as a professional, specialising is more important than getting a surface-level experience of cuisine from every distinct region in the world. The number of people in the world who have touched on every single other cuisine would be *exceedingly* rare, if they exist at all.

I love seeing chefs do something like this. Their appreciation and understanding of the food, quality, and flavour combinations is a totally different insight and I love it. As someone from a long family line of chefs and restauranteurs it's great to see this perspective. I also love that the reaction is still the same no matter who it is - by the end of the video theyre basically booking their flights to Korea.

There's something exciting about watching professionals discover Korean food. Their focus and understanding of the processes involved is cool, it feels like they're on the same wavelength as the people who made the dishes, from a different specialty. My favourite thing here is you can almost see the cogs turning on how they can adapt and use some of these flavours in their own cooking as well

In 2004 I moved to Korea to teach English. My coworkers took me out my first night for Korean BBQ and my reaction was spot on to these guys. This video got me all nostalgic 😢
