Love seeing Will and Jack back! It was great watching them go from the enthusiasm and brainstorming at the convenience store to the unsure and hesitant "yeah" when they're in the kitchen and are asked if they're ready lol. This is like a masterchef mystery box but with professionals kicking it out of the park. We are all Brendon. Taste (steal) away mate lol! They should really put that croquette and morning rice pudding on the menu. They both looked amazing! And I would eat the shit out of that fried rice with the chargrilled marinated pork belly! YES! I second Jack! He and Will desperately need a research trip! And they have to go all over Korea to try the best of the regional dishes beyond what you can get in Seoul!!!! And of course, they need to try all the challenging Korean dishes - beef offal, eel, raw marinated crab, etc. And they'd get such a kick out of going to the fish market and getting all that cooked for them!

I don’t understand why people make faces when they are told they are eating trotters. One you typically don’t eat the hoof, though simmered very slowly for a very long time, it’s a rich collagen returned gelatin source for a stock. Two shin, ankle and foot meet and bones and skin have long been the basis for souls and stews- like since heat from a fire and some sort of container were combined to simmer things over time. Everyone who makes that face has eaten gelatin containing products thousands of times.
