Why is 가져오세요 used for 게산서 but 갖다주세요 for menu and just 주세요 alone for ordering food items? Can you explain the difference in there uses?

갖다주세요 is a more polite way to say it! 가져오세요 is more of a command (like when your boss at work tells you to bring something.)

zahwa aulia 오다 [oh-dah] is the unconjugated dictionary form of "to come". 오세요 [oh-say-yoh] is a very polite and honorific way to say "to come". 와요 [why-yoh] is a polite conjugation. 와 [Wah] is the very informal conjugation of "to come" which should only be used with those around the same age or younger who you are very close to. You need to learn 한글 [han-geul] hangul, the Korean alphabet and it's pronunciation in order to understand the changes in pronunciation when conjugated differently. Using romanization (english letters) will just confuse you too much. 어서 [Aw-saw] romanized as "eoseo" means quickly. 어서 오세요 [Aw-saw oh-say-yoh] = "quickly come" and is said by store keepers as a greeting to customers similar to welcome in English.
