Jill McKeever’s sauce is my go-to sauce when I make it at home instead of just buying TJ’s cashew fiesta dip. I always make a half-recipe though, I just have a little bullet blender. I have to heat it up on the stove to get the sauce to thicken. I don’t use as much liquid smoke as the recipe calls for, and I usually add some diced jalapeno’s. Her recipe makes a HUGE amount because she is a family of 4 and has 2 teenagers that eat a lot :)

You can always make Jill's cheese sauce in an inexpensive blender and then transfer it to the stove or microwave it to really activate the corn starch and bind the sauce if you don't have a high speed blender! :)

So glad you added this Life with Jessica. Since we're "Esselstyn" WFPB we don't eat nuts. And, the recipes with carrots and potatoes always have a "slime" factor that I don't like at all. Jill's cheesy sauce works so well even without a high-speed blender (which I don't have). I use the stovetop to make it. Tastiest and easiest recipe that, without nuts, means it's actually oil-free which equals better for your heart and for weight loss, too.

This is how I tweak Jill's cheese sauce for a Nutribullet: 1/2 c. oats 1/4 c. nutritional yeast 1 T. up to 1/4 c. raw cashews - optional; I don't add cashews anymore 1 1/2 tsp. salt 1/4 c. roasted red pepper 1/4 c. diced onion (I keep some diced onion in the freezer to make this quickly) 1 T. lemon juice 4 drops liquid smoke 2 cups water I do not use corn starch, because the oats thicken perfectly well heated on the stovetop. It also works better on pasta without the corn starch. In the regular nutribullet, the water won't all fit in the largest cup, but I just stir the rest of the water into the rest of the ingredients when heating. The water will all fit into the tallest cup for the 900 series Nutribullet.

Blender washing tip. Add some hot soapy water, cover the lid with a towel and turn it on.
@seeker45694 жыл бұрын
I would also recommend adding a tablespoon of baking soda along with the soapy water. It literally scrubs during the blending process, and also gives it a squeaky clean polished look in the end. :). These things will work if you don't wait too long to clean it after each use. If you can't clean it right away, do a quick rinse, and then let it soak in hot water.
Hello Brian & Jessica, you helped me on my journey to losing weight. Although I didn't do the whole potato diet thing, I did use you for inspiration and chose to do the intermittent fasting and have lost 24lbs so far. I was 236lbs now down to 212lbs, would like to be 180 or 190. Thank you

I make Jill MCKeever's cheese sauce all the time. You don't need a Vitamix for it, just blend it a minute or so until smooth in a Nutra bullet or even an old Oster blender. It will be very liquidy. Pour it into a saucepan on a medium heat and whisk constantly for a couple of minutes or so and it will get as thick as you want it. I also portion it out into smaller containers, refrigerate some and freeze the rest because I don't use it all right away. It freezes well. it firms up in the fridge and I slice it and use it for grilled cheese sandwiches.

My most favorite cheese sauce is the Vegan 8 Easy Vegan Mexican Cheese Sauce. It is simply cashews, salsa, water, nutritional yeast and cumin. All my non-vegan friends love it and request it when having parties. I believe it can be made with white beans to reduce amount of fat. Try it - you’ll love it. My second favorite is Donna’s cheese sauce from Nutmeg Notebook. Similar ingredients to Chuck’s with seasoning variations so fat free. This is my everyday cheese sauce. Always have some in fridge.

This was a fun video! About 2yrs ago, I studied the cheese sauces on offer here on youtube and made my own creamy, yummy version wfpb-sos. It's a combo of Brittany's and BNV's, [uses no nutritional yeast] Here it is-- 2med potatoes, 1 carrot, 1/4 med onion, boiled, then into blender w/1c boiling water, 1/2c cashews, 1tsp ea onion,garlic powder, 1/4tsp ea turmeric,mustard powder, 1-2Tbsp lemon j, 1tsp ume plum vinegar. It makes a quart. I put some in a squirt bottle for drizzling over chili or hot vegs. I'm tempted to add a pepperoncini or chipotle for some heat. Yes Jessica its freakin amazing how vegetables, spices and nuts can taste cheesy! I'll be sharing your throw-down!

I love Jill’s game changer sauce on its own or as a base,....and I don’t mind the oaty flavour at all. The primary reasons it’s the go to for me is the quick prep, the huge batch (big plant based a family over here) and the no cashews. That sounds interesting adding the beans. How much would you add? And personally, for me, I rarely use "cheese sauce" for chips, I use it to top my food bowls. It takes it to the next level on the tastiness scale.

Nate Johnson... So true. I've never found anything that really substitutes for dairy cheese sauce, but this is what I've chosen, so I try to make tasty foods, and don't expect them to taste like animal products. Just a good sauce, but I'm not crazy about nutritional yeast, which most of them depend on. It took me a long time to stay off off dairy cheese, so all in all, I really don't want anything that really tastes like it, so it's just as well. Your tips sound yum.
@missinglink_eth4 жыл бұрын
small footprint yep. Don’t try to replicate animal products. That just turns non-vegans off of vegan food because they think it’s just bad versions of their food. Just make delicious food and share it for what it is.

I make this so much that I have made personal preference changes to it-like I only use 1/2 the red peppers it calls for, no cornstarch needed bcuz it thickens on the stove top when heating. I add a bit more liq smoke, a T white miso, ACV instead of lemon, a small squirt of mustard, stuff like that.... but it's so quick and easy I keep some in fridge all the time. I love Peef's individual platter! I have never tried Jill's as the original recipe, but as a family of 4, including a 10-year-old and a former-picky 7-year-old, we constantly have a supply of it in the fridge. I end up making it about every two weeks, and it keeps just fine. I do not have a high-speed blender and just heat it on the stove until it's thick. My tweaks to the recipe are 1 tsp smoked paprika in place of the liquid smoke, tapioca starch in place of the cornstarch, and sometimes I use 16 oz of the roasted peppers in place of the 12oz. I also only use 1 tsp of salt. 😊

I adapted the Engine 2 Cheesy Chickpea recipe to make a sauce that I love. 1 can of chickpeas, 1 T Aminoes, 1/2 c Nutritional yeast, 1 tbsp wheat flour (can omit), 1/2 c almondmilk. Whisk together the aminos, N.Yeast, flour, and the aquafava from the chickpea can, boil it up, reduce heat & simmer it while whisking for a couple minutes. Add that mixture, the chickpeas and the almond milk to a blender. Blend for a minute til it's thick & creamy. Add more almondmilk if it's not creamy enough. Fantastic over potatoes, and thick enough that I want to make pizza with it as the sauce. Oh, and add sriracha to taste if you want a spicy kick!

I make Jill's cheese sauce without a high speed blender - just blend until smooth, then heat in a saucepan to thicken. She also refined the recipe later and added cashews - it's in her cheesy broccoli and rice recipe. If you do experiment with your own recipe, some recipes online use tapioca starch to give a goey stringy texture.

I recently made Jill’s because my daughter wanted some for my grandson to try. They have cashew allergies at her house and my grandson is usually a pretty picky eater. We thought using the oats would be a great option. He actually really liked the cheese, but said he thought it needed to be spicier. I added some green chilies & it really made it taste more like nacho cheese.
@KrocksInTheKitchen4 жыл бұрын
Yeah, that's the conclusion we came to as well. It just needed more spice to taste more like nacho cheese. 😀

The first one I made was Jill’s and I still make it on a regular basis but I do add additional spaces like chili powder or green chilies. It’s great to pour over potatoes and add some salsa, the combination is good. However, I would not put it out for a bunch of non-vegan people and expect them to like it much so I look forward to trying the others. I also just ordered Dillion’s cheese sauce powder from WYW and look forward to trying it. Thanks!

I make the Jill McKeever sauce all the time, and put it on everything. I'll have to try some of the others. I don't taste oats, and I love that it's practically fat free and literally takes like five minutes to make.

Makes me want to nosh on chips & cheeze-ish sauce! I use Plantiful Kiki & Running on Plant's recipe, with the spices modified for my taste buds. Love how Peef had his own plate to also test!

Great side-by-side comparison - very balanced and thorough. Of course, now I want to buy yet another cookbook, but that's okay 'cause that's kinda my thing. (Three of my WFPB cookbooks are out on loan to a friend right now, so there is space on my shelf.) I have the ingredients to make several of these right now, but I'm going to start with Jill Cheever's, using some of the suggestions from other comments below. I'll probably be adding some chipotle or chili powder for that extra kick of heat, and I love pickled jalapeno, so that's going in there too! Thanks for keeping our no-shopping pantry meals exciting! Cheers!

My favorite cheese sauce is High Carb Hannah’s potato nacho cheese. It’s so good, it’s the only cheese sauce I’ve ever made. I also like that it’s fat free. Thanks for making these. I might need to branch out.

So ultimately this comes down to what you have in the pantry. I have some roasted red peppers so today I would make the Jaroudi Family version, when I get a butternut squash in I would try the last one. And so on...

I love the versatility of Jill's cheese sauce. (I make the batch and usually start by using it for mac n cheeze. Just toss in some cooked pasta and add some mustard powder and garlic powder; the leftovers keep in the fridge for up to a week (rarely more because I usually eat it all). I use it for a dip (add a bit of onion powder), on tacos (add some chipotle), drizzled on pizza, and even as a sandwich spread (instead of mayo). In JIll's first video, this recipe was made in a regular blender and then put into a pot to cook briefly and thicken up -- but I discovered that I could skip that step and cook it in my brand new Vitamix! I was surprised to see that is now how she suggests doing it! The other really good benefit of this recipe is it is very inexpensive. Cashews (especially raw) are very costly -- so this one scores for being budget-friendly, quick, tasty, fat-free, nut-free and versatile. Thanks for a great video!
