How do we know if we have soaked the glutinous rice enough since different types have different soaking time?

You need to try out to know. I always use Pulut Susu which is more expensive type of glutinous rice for better texture, and the soaking time is short, only 4 hours will do, the texture is soft and chewy. Cheaper one may need to soak longer, may be overnight, the texture is soft and sticky.

It is cooked when it has thickened. Steam the kaya for 1 hour will make it more fragrant.

My blue pea juice though seems bright blue, it produces dull blue when I added to the glutinous rice. Is it because I didn’t use fresh blue pea flowers? I bought those dried type.

Thick blue pea juice should have purple colour, if it is blue then it is not thick enough. You need quite a lot of dried blue pea flower for a thick juice.

how do you prepare the telang juice? i mean how many petals for how many ml water to get that strong blue colour? i have many flowers at home but do not know the ratio to make the juice for making kuih

I use dried bunga telang, need quite a lot, soak in 3-4 tbsps of hot water, then I squeeze out the juice to see the colour. If it is dark blue, then I will add more dried flower. To have deep colour, the bunga telang juice should be purple blue in colour.

Can I ask where I could have possibly done wrongly? My caramel syrup after steaming keeps producing water? Is it I didn’t do correctly my caramel syrup?

Do you mean your kaya is watery after steaming? If your kaya becomes curdle and watery, then it is too hot. The bottom of the pot with kaya shouldn't touch the hot water at the bottom.

how to differentiate thin and thick coconut milk? n is the clitoria flower juice available from normal supermarket?

You will have thick and thin coconut milk if you extract coconut milk from fresh grated coconut by adding some water. When the fresh coconut milk is chilled for few hours, it will separate into 2 layers, the upper thick white layer is thick coconut milk, while the bottom thin layer is thin coconut milk. If you buy ready-made coconut milk from market, it is thick coconut milk. To obtain thin coconut milk, just combine 15% of thick coconut milk with 85% of water. For example: 30 ml thick coconut milk +170 ml water will yield 200 ml thin coconut milk. Clitoria flower is usually planted in home's garden, seldom available in market. It is just for colour, you may omit it if you can't find or replace with some artificial colouring if you prefer.
