Recipe for homemade ice cream made exclusively from natural ingredients. Only cream, eggs, sugar and milk, no industrial thickeners, stabilizers, preservatives or dyes.
This recipe from the 1961 Cookbook is one of our favorite homemade ice cream basic recipes. It makes absolutely wonderful ice cream, which we did not eat even in our Soviet childhood. In addition, the recipe is just a field for various experiments with tastes. In this case, the basis is creamy ice cream: on its basis, you can prepare crème brulee, chocolate, coffee, ice cream or pistachio.
EQUIPMENT
saucepan with a wide thick bottom
wooden spatula or regular spoon
ice cream freezer container
whisk or mixer

wooden popsicle sticks
INGREDIENTS
For basic ice cream
750 ml milk 3.2-6% fat
250 ml cream 33% fat
8 pcs. egg yolks or 4 medium eggs
250 gr. Sugar
50 gr. vanilla sugar or 2 tsp. vanilla extract
For ice cream
all ice cream
250 ml cream with a fat content of at least 33%
For chocolate, coffee, hazelnuts, creme brulee
100 gr. chocolate or 50-75 gr. cocoa for chocolate
180 ml strong natural coffee (reducing the amount of milk) for coffee
⅓ caramel sugar with water for creme brulee
200-250 gr. walnuts or shelled unsalted pistachios for the nut
For popsicle icing
100 gr. oil
100 gr. dark or bitter chocolate
