Omar kway chap is a delicacy comprises of a main made with smooth flat rice kway teow (flat noodles) serve assortment of sides like bean curd, dry bean curd skin, silky smooth collagen rich chewy pig skin soak with soya broth richness. If done right , melt in your mouth pork belly with fifty fifty fat and meat ratio. The meat is juicy and tender and the fats will melt and coat your tougue with a luxurious amount of lard while the juice of the meat mix with the braise sauce adds levels of aromatic favour to it. Not to mention offal of intestine soak with mild caramelized favour soya base broth with the right amount of chewiness and fats . Imagine paru but hundred times more smooth and juicy, you get the idea. There are other assortment like braise eggs , fish cake etc. The essence is the slightly caramelized earthy soya broth braise with good amount of meat n bean curd skin paired with the rice noodles in a slightly less salty broth water. In Penang , Kimberly road, night time there is a store that sells a version with duck meat. Really good. There they add a right amount of fried garlic elevating a different level of fragrance to it.
