Do you know, who is the king of the Chaats? Nope, It's Raj Kachori Chaat, that's why it's named 'Raj' which means 'Royal'. As the name suggests, the filling to assemble Raj Kachori goes just by that, it's generous, healthy and full of mouth-watering spicy taste.
Usually filled with potatoes, moong dal, yoghurt, spices, and chutneys. Topped with cilantro, sev, and pomegranate this is the ultimate indulgence! There is no such hard and fast rule as to what you can fill to enhance the taste of the chaat, it could be anything you may like.

333.33 ml/ ¼ cup Warm Water
For Stuffing:
23.33gms/ ¼ cup + ½ Tbsp Besan (gram flour)
10gms/ 1¼ tbsp Rava/Suji (semolina)
½ tsp Baking Soda
23.33ml/ 2½ tbsp Warm Water
Oil, For Frying
For Filling:
Boiled Potato diced
Dal Moth
Chickpeas (Boiled)
Chaat masala
Green chilli chopped
Sev (thin)
Curd
Tamarind Chutney
Mint chutney
Ginger julienne
Beetroot (julienne)

I am from Kerala and I love chaat. Unfortunately we don't have many chaat shops here and the ones we have lack the flavour and taste of real chaat.
