Wow, never heard of this dish! In Italy we use watermelon peel to make jams and candied fruit (tutti frutti style), but its use in a savoury dish is really new for me. I'll try it soon! ☺️

Chef KK you ignited those nostalgic memories of this sabzi. Since kid I guess last 34 -4 =30yrs my mom is making this sabzi with panch phoron - the tarbooz ka ras which u have added . In my house whenever watermelon is white or excess of watermelon is Der this veggie is mandatorily cooked most bong houses u shall find this sabzi atleast every Jana family member knows this recipe. I am a Jain and my in laws are from Nimaar a small region in M.P. . Here we used to cook this recipe. Some more recipes are there like garmi me Aam ki guthli ki sabji, aam ki guthli ke papad, aam ki guthli ki supari and many more. Mujhe bas itni hi pata hai. I think you should explore that side of Madhya Pradesh.
