Very nice and healthy option for regular mayo. I have been making alternate mayo for my salads for more than a year now. I use yogurt or thick curds instead of milk. And also I use either paneer or cashews. Not both together. For herbs as a variation I have used dill and basil also. Finally I have made a version using avocado. For all versions I prefer to add one green chilli and one clove of garlic. I have not made the tandoori version so far. That looks interesting. Will try it. Thank you Chef.

Ur way is much better, something i too prefer, coz cashews bring in something else to the taste, nuttiness and undesirable heaviness which is not exactly what we look for in a mayo. One fat source is enuf in a mayo, why need two unnecessarily.

@peeeceee4756 I make Avocado Mayo as below: Avocado - about half Thick curd (yogurt) - 1 cup Cashews- 6 to 8, soaked for 15 minutes in boiling water or roasted. I prefer to roast them. Lemon juice - half lemon or more if you like Slat and pepper - to taste Green chilli -1 Garlic clove - 1 Coriander leaves - half fist Mint leaves and basil leaves - 8 to 10 each Olive oil - about 2 tbsp Sugar- 1 tsp or to taste. I prefer to add add dark jaggery. I have substituted few cubes of paneer in place of Cashews. Optional : rocket leaves or radish leaves, beetroot leaves or mustard leaves can also be added. But add any one. Not all. I sometimes add a few of whichever of these leaves I am adding to the Salad, Blend all to a smooth consistency, without adding any water. Store in fridge in air tight container. Should use in about a week's time. If too thick you can add little water to the portion you take out, while using it. This can be used as a sandwich spread or wrap sauce also. You can mix any other sauce to it if you like while using it, depending on your taste. Or it is nice as it is. This is so versatile that one can easily make variations of it. If you wish to make even lighter version you can omit the Cashews/ paneer altogether as avocado itself lends enough fat to the dressing. It will still come out creamy. Hope you find this useful.

I made it and it was thick, great and tasty. But chef i found it too dry like paneer paste, rough. I added a spoon of butter and it was done, awesome. Someone commented about doodh phatehga nahin? Actually you add it after the blitz and it doesn't split.
