Kuvale/ Boodh kumbalakayi/ Winter melon/ White Pumpkin is a vegetable commonly included in many South Indian curries. In this recipe, ash gourd is cooked and simmered in a very mild coconut masala and then finished with a mustard tempering. This recipe was shared by my MIL years ago. The recipe calls for just one red chilli and hence the dish is not very spicy and the roasted fenugreek seeds adds a very unique taste. Ash gourd can be substituted with yellow cucumber. This dish is usually whitish in color but mine turned pale red as I have used Byadgi chilli. I hope you enjoy making this as much as we did. Please leave me a comment if you have any questions.
Ingredients:
Ash gourd - 250g
Salt - To taste
For tempering:
Coconut oil - 2 tsp
Mustard seeds - 1/2 tsp
Curry leaves - 4-5
For Masala:
Grated coconut - 3/4 cup
Dry red chilli - 1
Tamarind - a small piece
Fenugreek seeds (Methi) - 1/2 tsp
Water - For grinding
