EPIC has truly found LOST recipe of Gujarat. I am Gujarati and never heard of both the recipes. Such recipes are not lost, but we have lost our traditional food.

Rajasthan main hum makka ke dhokle bolte hai isme papad khar dalta hai or steem main pakate hai, desi ghee, kadi, marwad main, urad dal mewad, tuar dal m.p main khayi jati hai. Humare yaha green methi and black paper and clove bhi dalkar banate hai winter season main. Paniye khakre ke patte main makka ki roti banakar uple main bati ki tarah banate hai, baswara Rajasthan se Ratlam mp region tak. Thanks

is recipe mei to chhilka ali urad al use hui hai jsko aditya ne toor/arhar da bola hai. Baat ye nahi hai ki dal kaun si hai, parantu is taah ke khud ko expert batanay wale itnay ignorant kaise hotay hain? ab echaey ye dampatti is shahri almot angrez babu ko correct bhi nahi kar paaye. Aap ki ye baat to sahi hai ki ha area ke gareeb log & jo "purana" log they wo local produce & crops hi use kartey they isi iye barter system tha & ye bahut hadd tak self sufficient bhi they & environmentally sustainable bhi they/ Ye sub kachra to european akal ke andhon ne aa kar kiya hai

Kuver paak 2 litres milk boil till it reduces to half Add 1 cup aloe vera that is blended & strained into the same pan again keep it stirring on low heat till becomes all dry lump like. Add 1 cup cream and 1 cup sugar syrup and cook again till it’s all dried lumpy consistency. Now spread flatly in a pan with 1/2 -1 inch let it cool down completely and layer it with cow ghee garnish with nuts and put in refrigerator to cool down further atleast 1-2 hr and then it’s ready to eat. It’s eaten during winter time
