المقادير:
كوبان ونصف + ملعقتان طعام (340 غرام) طحين لجميع الاستعمالات
ربع ملعقة صغيرة ملح
كوب زبدة غير مملحة (226 غرام) طرية
ثلثي (2/3) كوب (134 غرام) سكر
صفار بيضتين
ملعقتان صغيرتان فانيليا سائلة
برش حامضة (ليمونة حامضة)
لتغطية:
سكر بودرة
ثلاثة ارباع كوب مربى الفريز
ملعقة صغيرة ونصف عصير ليمون حامض
حرارة الفرن 350 درجة F او 180 درجة C على الرف الوسط لمدة 14 دقيقة.
Ingredients:
2 1/2 + 2 tbsp (340 g) all_purpose flour
1/4 tsp salt
1 cup (226 g) unsalted butter, softened
2/3 cup (134 g) white sugar
2 large egg yolks
2 tsp pure vanilla extract

Zest from 1 lemon
For topping:
powdered sugar
3/4 strawberry jam
1 1/2 tsp freshly squeezed lemon juice
🌹Instructions🌹
1. In the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl using an electric hand mixer) beat on medium speed the butter, sugar, and lemon zest just to combine about 1 minute.
2. Scrape down the sides and bottom of the bowl with a rubber spatula, then add salt, vanilla, and egg yolks. Beat to combine about 1 minute.
3. Scrape down the sides and bottom of the bowl. With a mixer on low speed, gradually add the flour to the wet ingredients until just combined. The dough will seem dry and crumbly, so I knead the dough by hands until smooth.
4. Divide the dough in two equal parts. Cover the first part in plastic wrap and set aside. Start working on the second part. Divide dough into small portions, mine weight 12 g (if you like bigger cookies, you can use one tablespoon cookie scoop to scoop the dough).
5. Use your palms to roll each dough into a smooth ball and place 1 inch apart on an ungreased baking pan (I used half sheet pans).
6. Use your thumb or the handle of a wooden spoon to gently press an indentation into each dough. Cover pans with plastic wrap and refrigerate for at least 4 hours or overnight.
7. Bake 1 sheet at a time in preheated 350 degrees F (180 degrees C) oven on the center rack for 14 minutes. Remove from oven and let cool for 5 minutes on the baking sheet, then transfer to a cooling rack to cool completely.
8. Using a fine strainer, dust the cookies with powdered sugar.
9. In a small pan, heat jam and lemon juice until gets liquidy and runny, stirring until full boil.Turn the heat off and spoon the jam in the indentations of cookies. Let cool completely.
