Becky Bloomfield, KDFWR Field to Fork Program Coordinator, is here to show us how to process a wild turkey!
This process requires only a knife for cutting, and produces the breast, tenderloins, thighs, drumsticks, beard, and fan for consumption or future use. The turkey that Becky is using for demonstration is a "Tom" (adult male) Eastern Wild Turkey that was taken in the 2023 season, but this process can be replicated across turkey species.
