செய்முறை:
1. கடாயில் எண்ணெய் ஊற்றி அதில் சீரகம், நறுக்கிய வெங்காயம் சேர்த்து வதக்கவும்.
2. பின்பு நறுக்கிய உருளைக்கிழங்கு, இடித்த பூண்டு, நறுக்கிய தக்காளி, பச்சை மிளகாய் சேர்த்து வதக்கவும்.
3. பிறகு உப்பு, மஞ்சள் தூள், மிளகாய் தூள், சீரக தூள், தனியா தூள் சேர்த்து கலந்துவிடவும்.
4. தண்ணீர் ஊற்றி கலந்து கடாயை மூடி 10 நிமிடம் வேகவிடவும்.
5. பின்பு பொடியாக நறுக்கிய வெந்தயக்கீரை சேர்த்து கலந்து 10 நிமிடம் மிதமான தீயில் வேகவிடவும்.
6. கடைசியாக கரம் மசாலா, ஆம்சுர் பவுடர், சில்லி பிளேக்ஸ் சேர்த்து கலந்து இறக்கவும்.
7. ஆலூ மேத்தி தயார்.
Aloo Methi is a very simple side dish recipe which is mainly made with potatoes and fenugreek leaves. This curry is a great combination for phulkas, roti or jeera rice because it is full of unique flavor. This is a dry curry which has no gravy base. Make sure you use tender fenugreek leaves always for making this curry to make sure they are not bitter. Because mature fenugreek leaves actually can ruin the whole taste of the dish.
