This takes me back to my childhood. I grew up in a small city in Michigan, population 2,000. We'd drive down to visit my Grandma who lived in a Detroit suburb, and they were super diverse. You've got Greektown, you've got Hamtramck which was mostly Polish, but I remember eating a fancy dinner as a young boy, and Grandma would make lambchops, something completely not available where I lived. And she'd serve it with mint jelly, which, what is that? I'll tell you what it was, delicious. Somehow, my family, with 5 siblings, 2 parents, would all cram in her 2 bedroom apartment and have enough places to sit and eat and then sleep. I mean, there was almost next to nothing to do there, she didn't have toys for us kids, I don't think she had cable t.v., so we read books, played dominoes and cards, and ate amazing food that we couldn't get at home while in her place.

There are so many chefs out there on the Internet... but only JeanPierre can make you cook with such a smile and hooked in suspense till the end. Beside, he always does some little change here and there, and it's always the suspense to see his final verdict. A last advice from the medic across the room (mom): stop burning the tongue with food: you can get burns, choke while aspirating for air to cool, and apparently +60ºC temperatures can be precursores to mouth cancer or something... So take good care of yourself, chef, we need you for many more years.

I love the lamb fat. Growing up in Tasmania Australia we had great quality lamb. I also worked on a sheep farm and we ate from the farm. Lamb fat is rich in Omega 3 oil. Also has a high smoke point if you collect it. Keeps 4-5 months in fridge. But if you sear the fat it is delicious on the bone. Seriously. Crispy goodness. Love

Do I Like It? Are you kidding me? OMG...lamb is my absolute favourite. I was a bit shocked that you cut the fat cap off....that's my favourite part. lol. I am old school. I grew up on Mixed Grill's with tomatoes and sausages broiled in the oven. Scotch Broth is my favourite soup. My husband is the lamb king....I think. Also when I grew up in Ontario Madame Benoit was our lamb queen to follow. I still have a torn booklet of recipes of hers that uses every cut of lamb imaginable. My favourite lamb is from New Zealand as I think it has the best flavour. I was absolutely licking my chops when you plated the dish. lol You are a gem! Thank you for sharing your knowledge, once again. And....your kitchen always looks squeaky clean. 🤩
