Lamb/ Mutton Kunna |Recipe
This is an easy & yummy revipe for kids & elderly with minimum spices! I would rather call it Nihari’s sister lol but much easier to make. You can make it with beef and chicken too.
Ingredients:
•Mutton/Lamb - 700g-1.5kg
•Ghee/Oil - 1/4 Cup
•Ginger Garlic Paste 1.5 tbsp
•Onions - 1 Big Sliced
•Wheat flour dough(Goonda Hua Atta) a medium ball
•Spices( Red Chili Powder 1 tbsp, Turmeric/ Haldi 1 tsp, Black Cumin/ Kala Zeera 1 tsp, Corriander (crushed) 1 tsp, salt to taste +Garam Masala to sprinkle in the end)
Method:
1. Add 1/2 Glass of water, Ghee/Oil, Mutton & all spices except garam masala in a wok. Bring it to boil. Cook until for 20 minutes or until oil seperates & fry meat for few minutes.
2. Now add 7-8 glasses of water. Bring it to boil. Cover and cook on medium-low flame until meat is tender.
3. Take a medium sized ball of wheat flour dough( atta ka paira le lain) . Put in it a bowl of water 1 cup. Leave for 15-20 mins. Then Massage it with hands so the water is starchy. Massage as much as you can, in the end a very small ball will be left ( gluten basically)
( you may skip this step like i did in video, just mix 1/2 cup wheat flour with water & add in boiling gravy while stirring)
4.Uncover the wok. Add starch water slowly while continuously stirring it. ( just like we add cornflour in soup). Cook on high flame for 15 minutes & then turn the flame low for 10 mins until oil comes on top.
5.Sprinkle Garam Masala on top with green chilies and fresh Corriander before serving.
Serve with Lemon,Fried Onions, Green Chilies & Ging
PS: if you don’t want to use wheat flour dough( ghoonda hua atta) then Roast Wheat Flour in a pan until light brown. Let it cool down. Mix/whisk it slowly in 1 cup water making sure no lumps are formed and the gravy gets soupy.
Cooking it in earthenware makes it more tasty. You can use any wok though or pressure cooker if you’re in a rush.
