An easier way to wilt the cabbage is to wrap it in double plastic wrap, put it in the freezer, freeze it solid and then thawed out in the fridge. When you unwrap it the leaves will naturally wilt. You'll still want to score the vein in the back but it saves you from all the cooking and stinking the house up of cabbage. You also avoid the risk of under or over cooking the cabbage. And also recommend when you make this dish instead of putting cabbage leaves on the bottom, put in a rack of lamb bones. It will Elevate the cabbage rolls and the lamb bones will further flavor the dish.

YES. Learned the frozen cabbage trick from Julia Child who learned it from a polish lady I think. Many people prefer a large savoy cabbage for rolls. My lithuanian SIL does, but buys regular cabbage because it's cheaper.

Tried this for dinner tonight, first time I’ve done cabbage rolls on my own. Loved the flavor with the cinnamon and currents and the crunch of the shaved almonds. I did it with ground beef because I wasn’t sure of my skills and didn’t want to sacrifice my lamb. Amazing recipe, wife was impressed and I have a new go to for my list of favorite Chef John’s!;)

I love stuffed cabbage rolls with ANY meat that is on sale, but my favorite meat is lamb or a pork and beef mix. Anyway, I wanted to say that I put my cabbage in the freezer overnight, then take it out when I get up the next morning. When it thaws, the leaves just peel away easily. Love your recipe. Will give it a try! Thank you.

Here, in Lithuania, we have almost the same dish, except we don't add almonds and currants. And we call this dish "Balandėliai" in lithuanian, which means "doves" :)) love this dish very much and I will try to do it in this way ;) thank you for this recipe!

In Turkey we make it without cinnamon, raisins and almond and usually use veal mince. Also long grain rice is never used; always short grain or bulgur.

So many versions of this type of dish using beef, pork, lamb etc. In Hungarian it's known as töltött káposzta, stuffed cabbage. Our family has loved it for generations!!

Sarma in Bulgaria, too... We usually make it with any kind of meat (mainly pork and/or beef), sour cabbage and we boil it, with a plate on top. My family makes it with finely chopped meat instead of minced meat and it is actually fun to sit around a table with other people and chop meat for a whole lot of people.

A couple of advices from a Serbian dude. We make this dish all year long and it's one of the local specialties. So, apart from lamb, you can do this with almost any ground meat mixture. 50% pork 50% beef is an ideal combination for me. Secondly, it tastes much better if you use soured cabbage heads (you can probably buy them at supermarkets, here we make them as a part of our winter stores). And last but not the least, it tastes even better if you put in in a 180°C oven with a lid on. Cheers! ;)

this dish reminds me so much of my grandmother, she used to make me cut a whole bunch of onions and tomatoes (she did the sauce from scratch :)~ ) with some variants instead of lamb, she used beef and she didn't put almonds and raisins but it all tasted so good I'll try to make this on my own one of this days maybe on my mother's birthday. ty for sharing this recipe!

in middle east this is a traditional dish sometimes comined with stuffed grape leaves, eggplants, onions and sometimes potatoes. and the leave raps r smaller than these, its good to know the different ways of other cultures in making it :)

Just a hint, Chef John. You can soak the rice in cold water for 20 mins and then drain it before adding it to your meat mixture. You should be able to cut your oven time down to an hour if you do that. That's what my mom does for her Albondigas recipe.

This is very close to a Mediterranean cultural dish called dolma. Dolma is meat-in my culture [since there so many different versions of dolma] its beef and rice wrapped in either cabbage, grape leaves, eggplant, zucchini or bell pepper, and we do the tomato paste/sauce over the finished wraps before cooking as well. I was wondering if this recipe was inspired from that?

This sounds amazing with lamb instead of ground beef. I grew up eating stuffed cabbage. Sometimes my sister, mom and I would get together and make what seemed like hundreds and split them between our families. They keep so well in the freezer. My son never liked them and he doesn’t like lamb so he’s missing out here. He doesn’t like grape leaves either. He’s really missing out cause I think these are probably better than the beef ones. Allspice instead of cinnamon, no feta but maybe some ricotta or just parmigiana. The next day you can make halushki(don’t know if I spelled that right)with the remaining cabbage, onions and kielbasa in a skillet on the stovetop. Lots of butter here too.

That's so interesting, wow all the way to Sweden, huh? I can't believe this dish has so many variations, I want to try them now. Vinegar and gravy, I haven't heard of this version at all. In the Balkans this is called "sarma", but instead of lamb, we use ground up beef and pork, and we don't usually add the almonds and the currants, just onions, garlic, carrots, parsley and meat. We also wrap it in grape or chard leaves, especially during the summer season, and we use the cabbage in the colder days.

I made this last night exactly like the recipe. It turned out great, but I found the lamb was a little under seasoned. I'm wondering if putting all those seasonings, you are suppose to put in the onions, put on the lamb instead? Oh - also added an egg to the lamb mixture and went a little lighter on the butter/oil for the onions.

Dear Chef John, you should try to get your hands on an entire pickled cabbage, they usually sell them at eastern european specialized stores. In Serbia, and many other countries in the balkan we make this same sort of dish called Sarma but with the pickled cabbage leaves. Being the culinary god that you are, you probably might already had it once, but if you haven't you should really try it! ;)

My family uses beef instead of lamb but we do the onions and garlic the same way. We don't add almonds or currents and instead of tomato puree and stock we use tomato soup and water. There a family classic and always a big hit
