I realize that I tried this recipe almost exactly SEVEN years after you posted it, but I had to tell you . . . I made it for my elderly parents (88 & 85), splitting the recipe into two smaller pans. Rather than freeze the second one, my dad told me to take it home for my husband and myself. Boy am I glad he offered! It was delicious! When I needed a recipe for Shepherd’s Pie, the first place I looked was your channel. I knew if I found it here, it would be amazing. Thank you so much! Tip from an American in the uk, the grill Irish guy is referring to is the broiler!😂 I'll never understand why that is called a grill....a grill is what you cook a barbecue on. The heat comes up from a grill. A broiler sends the best from above.

To be fair Yukon Gold potatoes are the best potatoes for pretty much everything. Their not has hard or as starchy as the Russets and they've got more flavor than the Russets or red potatoes. They're a great multi purpose vegetable.

Made this for dinner last night. Had to use beef as I was informed by my wife that if I ground up the leg of lamb in the freezer I'd be sleeping in the car. Also added roasted parsnips to the filling. Was gonna mash them and use as the topping, but the wife loves mashed potatoes and...well we've already covered the sleeping in the car scenario. I gotta say it was hit!! Definitely going in the rotation from now on.

Made this for the first time tonight and it turned out delicious! I followed his METHOD to a T but had to substitute some ingredients. I used half lamb, half ground beef; corn instead of carrots; dried rosemary instead of fresh; medium cheddar instead of sharp; that's just what I had on hand. I did a simple stripe pattern on the potatoes with a fork and, for the last few minutes in the oven, turned on the broiler which made the top extra golden. Chef John is great at teaching techniques and building confidence.

Made with ground beef in Argentina we call that "Pastel de Papa" or "Potato Cake" in english, and it's amazing, we add some cuted olives and bell pepper instead of carrot and top the potato with cheese (I like to put provolone there) and make a a crust with that

I seen people complaining that it is not traditional, the spice...followed by "can i use this, I do not like lamb", to which I would say do as you wish. In reality the dish has many variations and would have been made according to what was available locally, in that season and depending how much money you had (as a shepherd probably not much). Make it how you like and enjoy :)

Thanks for the reply however the dish cottage pie goes back to the 18th century and the shepherds variant was in use by the mid 19th century. It's in Mrs Beeton's cook book from the mid 19th century for example, and originally it was a way of using left-overs

I just finished making this recipe. After tasting the meat part, I needed to add more salt and pepper and a bit more ketchup to taste. I am, after all, the Stephen Fry of my Shepherd's Pie. My son and I enjoyed firsts and seconds. A very good recipe.

Since it’s getting cold out it’s time to revisit this. I use lamb or beef if the lamb isn’t available. Either is great. I don’t do cayenne unless I’m doing a chili and I don’t do the egg bit. I use whatever potatoes I have. I do admit the golds are easier to work with than the Idahos. With the beef version I add a packet of regular Sazon- which my scotch/irish friend Margaret told me to do and it’s awesome. The cheddar is great, but if you don’t have it- it’s still great. All the best!

Thank you for sharing a real Irish recipe for Saint Patrick’s Day! I was in Ireland last summer, and nobody served corned beef and cabbage.

Thank you! It's nice to revisit a classic weekly dish from my youth, often made from leftovers and whatever's on hand. LOL. We omit the spicy spice and catsup (ketchup). The addition of shredded cheese and egg yolk to the potato mash is an upgrade for the likes of us. My favorite cheese is the Dubliner... excellent!

This looks like a great recipe.. we love shepherd's pie, though we often use a combination of ground turkey (very low fat) and venison (also low fat).. and we just mashed cauliflower for the crust to keep the carbs down. Thanks for sharing this!

This sort of pie was one of the Monday night staples in our family when I was a kid . My mum used to use the leftover roast lamb from our Sunday baked dinner (when I was a kid Australians ate a lot of lamb as it was quite affordable then so leg of lamb was one of the more regular roasts you'd do on a Sunday) rather than raw minced lamb. She'd chop the leftover roast lamb into small pieces but apart from that, it was pretty much this recipe. No cayenne and she used Australian cheddar though. I haven't made a shepherd's or cottage pie for ages and this reminded me of how much I like them. I'll make one or the other soon, I think. They're an easy and tasty meal. Thanks for reminding me of this Chef John! Just a tip: If you like the cheesy baked crust on top (and who doesn't?) go with the rough and rugged pattern as you'll end up with more surface area and it will also be more crisp!

Okay, I made this recipe on St. Patrick's Day this year for my husband, who is Irish. It was fabulous!! Will definitely make it again. My husband loved it. He said it was better than his Shepard's Pie. Thank you for putting out this recipe.
